Cook Time 2 minutes
Total Time 7 minutes
Servings 1 cake

Ingredients

  • 1/2 cup cottage cheese (I used Good Culture Low Fat)
  • 1 large egg
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp cacao powder
  • 3 tbsp oat flour
  • pinch salt
  • 1 tbsp chocolate chips

Instructions

  • Grease a 6-ounce ramekin really well.
  • Blend cottage cheese, egg, maple syrup, vanilla, cacao, oat flour, and salt until smooth.
  • Pour about 1/2 of the batter into the ramekin and microwave for 1 minute.
  • Then add 1 tablespoon of chocolate chips directly to the center.
  • Cover with remaining batter and microwave for 1 more minute.
  • Allow cake to rest for 2 minutes before flipping it onto a plate.

Notes

  • If you cake is still wet in the center after the second microwave, add an additonal 10-15 seconds.
  • Serve immediately for the best molten chocolate center.
  • A square of dark chocolate can be used in place of chocolate chips.
  • Add a pinch of espresso powder to enhance the chocolate flavor.
