How to Make
Blend cottage cheese, egg, maple syrup, vanilla, cacao, oat flour, and salt until smooth.

Pour about 1/2 of the batter into the ramekin and microwave for 1 minute.

Add 1 tablespoons chocolate chips directly to the center. Cover with remaining batter. Microwave for 1 more minute.

Allow cake to rest for 2 minutes before flipping it onto a plate.

Tips and Tricks
- Blend until completely smooth for the best texture and to fully incorporate the cottage cheese into the batter.
- Grease your ramekin generously to help the lava cake release easily after resting.
- Place the chocolate chips directly in the center of the batter to create the perfect molten lava center.
- Let the cake rest for 2 minutes before flipping. This helps it set up while keeping the center soft and gooey.
- Microwave times can vary, so adjust as needed. The edges should be set while the center remains slightly soft.
How to Save and Store
Store any leftover Cottage Cheese Lava Cake covered in the refrigerator for up to 3 days. Reheat in the microwave for 15–20 seconds until warm. You can also prepare the batter up to 24 hours in advance and store it in the refrigerator until ready to cook.
For the best texture and gooey center, this recipe is best enjoyed fresh and is not recommended for freezing.

Pretty good! Tried this last night when I was craving a sweet treat but try to eat high protein. I had to sub almond flour for oat flour and used peanut butter instead of chocolate chips and it turned out great and hit the spot!
Very good. I added some peanut butter fur more protein. Very easy recipe and delicious. I used cool whip on top.
