If you love easy chocolate desserts that feel a little more nourishing while still tasting bakery-worthy, these brownies are going to be your new go-to. The combination of oat flour and rolled oats gives these brownies the perfect soft, chewy bite while keeping them incredibly satisfying. They have the same rich brownie taste as my Salted Caramel Sweet Potato Brownies and Double Chocolate Banana Bread Brownies, while still bringing their own unique chewy oatmeal texture that makes them so good straight from the fridge or warmed up with melty chocolate chips on top.

What I love most about this recipe is how simple it is to throw together. Everything comes together in one bowl with no mixer required, making these perfect for busy weekdays, meal prep desserts, or late-night chocolate cravings. The Greek yogurt keeps the brownies soft and moist while the maple syrup adds the perfect amount of sweetness without feeling overly heavy. They taste so good with a dollop of almond butter, or coconut whip on top too!

If you’re someone who always wants a sweet treat stocked in the fridge or freezer, these are definitely one to add to your rotation alongside my No-Bake Double Chocolate Peanut Butter Cookies or any of my bark recipes.

Tips and Tricks

  • Slightly underbake the brownies if you prefer an extra gooey center.
  • Let the brownies cool completely before slicing so they firm up properly.
  • Use dark chocolate chips for a richer chocolate flavor.
  • Warm leftovers for a few seconds in the microwave for melty chocolate centers.
  • For extra texture, sprinkle additional rolled oats and chocolate chips on top before baking.

How to Save and Store

Serve these brownies chilled, at room temperature, or slightly warmed depending on your preferred texture. They’re delicious on their own, topped with flaky sea salt, or served with a scoop of vanilla ice cream.

Store leftovers in an airtight container in the fridge for up to 5 days. You can also freeze the brownies for up to 2 months and thaw individually as needed.

These Double Chocolate Oatmeal Brownies are rich, chewy, and packed with chocolate flavor while being made with simple pantry staples like oat flour, rolled oats, Greek yogurt, and maple syrup. They come together in one bowl and make the perfect easy dessert or freezer-friendly sweet treat.
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes
Servings 9 brownies

Ingredients

  • 2 eggs
  • 1/2 cup plain Greek yogurt (can sub vanilla flavored)
  • 1/3 cup maple syrup (can sub honey or agave)
  • 1/4 cup melted coconut oil (or butter)
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cacao powder
  • 3/4 cup oat flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/2 cup chocolate chips (plus more on top)

Instructions

  • Preheat oven to 350°F. Line an 8×8 pan with parchment paper or grease well.
  • In a large bowl, whisk together eggs, Greek yogurt, maple syrup, melted butter, and vanilla until smooth.
  • Add cacao powder, oat flour, rolled oats, baking powder, baking soda, and salt. Stir until just combined. Fold in chocolate chips.
  • Pour batter into prepared pan and spread evenly. Top with extra chocolate chips.
  • Bake for 20–23 minutes, or until center is set and a toothpick comes out with moist crumbs.
  • Let cool completely before slicing for the best fudgy brownie texture.

Notes

  • Unlike classic brownies, these have a more rustic texture thanks to the oat flour and rolled oats. They’re moist and chocolatey with a naturally nutty flavor, while the oats create a soft, tender crumb that may crumble slightly when sliced but never feels dry.
  • Greek yogurt helps keep these brownies incredibly moist without needing a lot of oil or butter.
  • These brownies continue to firm up as they cool, which gives them their rich brownie-like texture.

This looks delicious. If I can’t find oat flour, what would you suggest as a substitute for it? Wheat flour? Almond flour?

You can make oat flour by blending oats in a blender for 60 seconds! that is truly the best thing to do vs substituting as this recipe was tested using those two flour. Almond flour should work but I am unsure of how they would hold up without properly testing the recipe 🙂
