Servings 5 mocktails

Ingredients

  • 1 large English cucumber (sliced.)
  • 1/2 cup lime juice (about 2.5 limes.)
  • 2 tbsp agave (sub maple syrup or honey.)
  • 1/4 cup fresh mint leaves (about 10-12 leaves)
  • 1 small piece fresh ginger (about 2 inches.)
  • 2 cups filtered water.
  • Club soda (to top off each mocktail.)

Instructions

  • In a blender, add in cucumber, mint, ginger, agave and water. Blend until smooth and creamy.
  • Then, pour the mixture into a strainer to remove the pulp. Set aside.
  • Next, fill a glass with ice and add in thinly sliced cucumbers. Pour the green juice over the ice leaving about 1 inch of space. Top it off with club soda and garnish with mint. Enjoy!

Notes

  • Use a high speed blender and keep blending until ingredients are well incorporated.
  • A strainer will remove the pulp quickly and easily, but you can also use a cheese cloth.
  • Add in more ginger if you want this mocktail to have more of a kick.
