Ingredients

  • French Toast Roll Ups
  • 4 slices of Blu-Berry Swirl Bread from Sola
  • 1/4 cup cream cheese
  • 1/4 cup fresh raspberries
  • 1 tbsp cane sugar
  • 2 eggs
  • 1 tbsp cinnamon
  • 1/4 cup almond milk
  • Toppings
  • 1/3 cup frozen blueberries
  • 2 Tbsp powdered sugar

Instructions

  • Start by cutting off the crust from each slice of bread.
  • Next, using a rolling pin, roll out the slice of bread until it is as thin as it can get. Set aside.
  • In a medium bowl, mix together cream cheese, raspberries and cane sugar.
  • Then, add about 1-2 tbsp of the mixture to each piece of bread and spread until it’s evenly distributed.
  • Next, tightly roll the bread like a log and set aside.
  • In a medium bowl, combine eggs, cinnamon and almond milk. Then dip each roll up in the mixture until each side is well coated.
  • Heat a skillet over medium heat and grease with butter or non-stick spray. Cook each side of the roll up until crispy and golden brown.
  • In the meantime, heat the frozen blueberries over low heat until soft and tender.
  • Add these on top of the plated French toast roll ups and sprinkle with powdered sugar and enjoy warm.

Notes

Roll out the slice of bread until it's as thin as it can get.
Cook each side of the roll up until it's crispy and golden brown.
French toast roll ups taste best when served immediately, but can be saved in the fridge in an airtight container and enjoyed within 2-3 days.  Re-heat by adding to a skillet until warm all the way through. Alternatively, you can re-heat them in an air fryer.
