What are French Toast Roll Ups?

French Toast Rolls Ups are a delicious breakfast treat. They are made by cutting off the crust of bread and then rolling it out until it is super thin. They are then stuffed with a filling such a cream cheese, rolled up tightly, and then cooked on the skillet until golden brown.

Ingredients and Substitutions

This recipe is made with Sola Blu-Berry Swirl Bread which is a great low carb, but high protein option. You can sub any type of flavor from Sola Sweet, or any type of bread.

Cream cheese, you can use regular or dairy-free.

Fresh raspberries or any other type of fresh fruit that you’d prefer.

Cane sugar to sweeten up the filling.

Eggs, cinnamon and almond milk for the french toast mixture. You can use any type of milk or nut milk alternative such as oat milk, cashew milk, hemp milk, etc.

Frozen blueberries that will be warmed up on the stovetop to make them juicy and warm.

Taste and Texture

These French toast rolls ups are soft, fluffy and so sweet. They are crispy on the edges but soft and tender and then stuffed with a warm but sweet cream cheese and raspberry filling.

How to Make

ONE: Cut off the crust from each side of the slice of bread.

TWO: Using a rolling pin, roll out the slice of bread until it’s thin.

THREE: In a bowl, combine cream cheese, fresh raspberries and cane sugar.

FOUR: Add filling to each slice of bread and spread evenly.

SIX: Combine eggs, cinnamon and almond milk in a large bowl, then dip each roll up in the mixture until each side is well coated.

SEVEN: Heat a skillet over medium heat and grease with non-stick spray. Add the French toast roll ups and cook until golden brown on each side.

Ingredients

French Toast Roll Ups
  • 4 slices of Blu-Berry Swirl Bread from Sola
  • 1/4 cup cream cheese
  • 1/4 cup fresh raspberries
  • 1 tbsp cane sugar
  • 2 eggs
  • 1 tbsp cinnamon
  • 1/4 cup almond milk
Toppings
  • 1/3 cup frozen blueberries
  • 2 Tbsp powdered sugar

Directions

  1. Start by cutting off the crust from each slice of bread. 
  2. Next, using a rolling pin, roll out the slice of bread until it is as thin as it can get. Set aside. 
  3. In a medium bowl, mix together cream cheese, raspberries and cane sugar. 
  4. Then, add about 1-2 tbsp of the mixture to each piece of bread and spread until it’s evenly distributed. 
  5. Next, tightly roll the bread like a log and set aside. 
  6. In a medium bowl, combine eggs, cinnamon and almond milk. Then dip each roll up in the mixture until each side is well coated. 
  7. Heat a skillet over medium heat and grease with butter or non-stick spray. Cook each side of the roll up until crispy and golden brown. 
  8. In the meantime, heat the frozen blueberries over low heat until soft and tender. 
  9. Add these on top of the plated French toast roll ups and sprinkle with powdered sugar and enjoy warm. 

Notes

Roll out the slice of bread until it's as thin as it can get. Cook each side of the roll up until it's crispy and golden brown. French toast roll ups taste best when served immediately, but can be saved in the fridge in an airtight container and enjoyed within 2-3 days.  Re-heat by adding to a skillet until warm all the way through. Alternatively, you can re-heat them in an air fryer.
