Cook the sweet potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Once the oil is hot, add the diced sweet potatoes and a pinch of salt. Stir occasionally, letting them cook for about 8–10 minutes until they start to soften and get some golden color.
Pour in ½ cup of bone broth, cover the skillet with a lid, and let the sweet potatoes steam for another few minutes until they're fork-tender. (This step helps them cook through without burning.)
Push the sweet potatoes over to one side of the skillet to make room. If the skillet looks dry, add a little more olive oil.
Add the ground turkey, diced onion, and minced garlic to the open space. Cook, breaking up the turkey with a spatula, for about 5–7 minutes or until the turkey is browned and fully cooked through.
Once the turkey is cooked, stir it together with the sweet potatoes. Add the diced bell pepper, cumin, smoked paprika, chili powder, salt, and pepper. Stir everything together and cook for another 3–5 minutes until the veggies are softened and the skillet smells super fragrant.
Toss in the chopped spinach and stir it through the skillet. It’ll wilt down quickly — about 1–2 minutes.
Sprinkle the shredded mozzarella cheese evenly over the top and let it melt for about a minute to finish it off.
Spoon the skillet into bowls and load it up with all your favorite toppings. I personally love adding sliced avocado, a big scoop of cottage cheese, a drizzle of hot honey, and a sprinkle of fresh parsley. Dig in while it’s still warm and enjoy!
