Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 pound of chicken breast (cut into 1 inch cubes)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup white onion (diced)
  • 3 cloves of garlic (minced)
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 4 cups chicken broth (low sodium)
  • 2 cups vegetable broth (low sodium)
  • 5 baby bock chow
  • 2 tsp fresh or dried thyme
  • 2 dried Bay leaves
  • 1 1/4 cup orzo
  • 1/3 cup fresh lemon juice

Instructions

  • Start by cutting chicken breast into bite size pieces. Heat 1 Tbsp extra virgin olive oil in a large pot or dutch oven and then add in the chicken pieces. Season with 1 tsp salt and 1 tsp pepper. Let cook for 5-7 minutes, stirring occasionally. Remove from pot when it’s almost done cooking and set aside.
  • In the same pot with the same juices, add in 1 Tbsp EVOO and diced white onion. Sautè for 1-2 minutes and then add in minced garlic.
  • Add in diced carrots and celery next and mix once more. Allow to sauté for 3-5 minutes or until veggies are almost tender.
  • Next, add in chicken broth, veggie broth, baby bock choy, bay leaves and dried thyme. Bring mixture to a low simmer.
  • Then, add in chicken and orzo and let simmer on low for 10-12 minutes or until internal temperature of chicken reads 165F.
  • Add in lemon juice, parsley and season with salt and pepper to taste, serve warm and enjoy!

Notes

  • Save Time: Use shredded rotisserie chicken for convenience; add it during simmering.
  • Perfect Chicken: Cook raw chicken just to 165°F for tender results.
  • Prep Ahead: Chop veggies and measure ingredients before cooking.
  • Balance Lemon: Add lemon juice gradually and taste for the right level of zest.
  • Boost Protein: Use bone broth for extra protein and richness.
