Cook Time 10 minutes
Servings 6 servings

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 garlic (minced)
  • 1/4 tsp red pepper flakes
  • 1/2 cup fresh lemon juice
  • 1/4 cup parsley (chopped)
  • 1/4 cup parmesan cheese (vegan if non-dairy)
  • salt and pepper to taste
  • 1/2 cup pasta water
  • linguine pasta

Instructions

  • Start by boiling salted water in a large pot over high heat. Once boiling, add in your pasta of choice and cook al dante.
  • Once the pasta is al dante, reserve 1/2 cup pasta water and drain the rest. Set the pasta aside.
  • Next, in a large sauté pan, add in EVOO and garlic. Heat for a few minutes, stirring occasionally. Then, add in the red pepper flakes, fresh lemon juice, chopped parsley, pasta water and parmesan cheese. Mix until ingredients are well combined.
  • Add in the cooked linguine last and mix until sauce is well incorporated into the noodles. Season with salt and pepper to taste and serve immediately and enjoy!
  • Pasta can be stored in an airtight container and enjoyed within 3 days. Best warmed up in the microwave. For best results, toss the pasta in EVOO after warming up to help add more “sauce” to the noodles.
