No Bake Cookie dough Cheesecake Jars (with cottage cheese)

These No Bake Cookie Dough Cheesecake Jars are rich, creamy, and nostalgic—everything you love about cookie dough and cheesecake in one easy, oven-free dessert.

Ingredients  

Crust:

  • 1 cup vanilla granola (blended into a powder filing)

Cheesecake Filling

  • 1.5 cups cottage cheese (I like good culture low fat 2%)
  • 1/2 cup plain greek yogurt
  • 1/4 cup maple syrup
  • 1 tbsp vanilla bean paste (or 1 tsp vanilla extract)

Cookie dough bites

  • 2 tbsp pure maple syrup
  • 2 tbsp creamy all natural almond butter
  • 1/2 tsp vanilla bean paste or vanilla extract
  • 1/2 cup almond flour
  • 2 tbsp mini dark chocolate chips

Topping

  • 1/2 cup heaving whipping cream
  • 1 tsp vanilla bean paste
  • 1-2 tsp powdered sugar (optional )

Instructions

  • Blend the granola in a blender until you have a powder and set aside.
  • add all the filling ingredients and processor for 15 seconds, over processing can result in a runny cheesecake filling.
  • Set in the fridge.
  • Combine cookie dough in a bowl and roll into bite sized balls.
  • Mix the cookie dough bites with the cheesecake filling, layer in jars starting with granola, cheesecake filling and homemade whipped cream.

Notes

 

  • Don’t over-blend the filling: Blend just until smooth—about 12–15 seconds is plenty. Over-blending can lead to a runny texture, so keep it quick!
  • Prep-friendly: These jars are perfect for making ahead. Store in airtight containers and wait to add the whipped topping until right before serving.
  • Swap the base: No granola? No problem. Crushed graham crackers, cookies, or oats (blended into a powder) all make great substitutes.
