This peanut butter cottage cheese cheesecake in a jar is a no bake dessert that’s smooth, nutty, and perfectly layered. With a crunchy cookie crust, creamy peanut butter cheesecake filling, and a glossy chocolate topping, every bite feels indulgent yet effortless.

Ingredients  

Filling

  • 1 ½ cups cottage cheese (I like 2% low fat Good Culture)
  • ½ cup plain Greek yogurt
  • 3 tbsp maple syrup
  • cup peanut butter
  • 2 tsp vanilla bean paste

Crust

  • 1 cup Simple Mills Sweet Thins (or similar cookie/cracker base) (crushed)

Topping

  • cup chocolate chips
  • 1 tsp coconut oil
  • 1 heaping spoonful coconut cream ((about 3 tbsp))

Instructions

  • Add the cottage cheese, Greek yogurt, maple syrup, peanut butter, and vanilla bean paste to a food processor. Blend until smooth and creamy, about 30–45 seconds.
  • In a blender or food processor, crush the Simple Mills Sweet Thins into a fine crumb. You can also place them in a zip-top bag and crush with a rolling pin.
  • Spoon a layer of cookie crumbs into the bottom of each jar. Follow with a generous scoop of the cheesecake filling. Repeat if you’d like thicker layers.
  • In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second increments, stirring in between until smooth. Stir in the coconut cream until the mixture is glossy and slightly thickened.
  • Pour the chocolate mixture over the cheesecake layer in each jar. Smooth the tops with the back of a spoon.
  • Add a drizzle of drippy peanut butter and use a toothpick to drag through to create a design (if desired).
  • Refrigerate for at least 30 minutes to allow the jars to set.
  • Enjoy chilled straight from the jar! Store leftovers in the fridge for up to 4–5 days

Notes

  • The jars set best if you give them time to chill, so if you can, make them the night before you plan to serve.
  • A high-speed blender or food processor will give you the smoothest filling. If you only have a regular blender, just pause to scrape the sides a few times.
  • For a lighter chocolate layer, use milk chocolate chips instead of semi-sweet or dark. It will give the topping a softer, sweeter finish.
