Ingredients

Pumpkin Oats

  • 2 cups old-fashioned oats
  • 1 cup pumpkin purée
  • ½ cup maple syrup (can sub honey, agave, sugar, etc)
  • 1 cup milk of choice
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • ½ tsp salt

Cheesecake Swirl

  • ½ cup cottage cheese
  • 2 tbsp maple syrup
  • 1 tsp vanilla bean paste

Instructions

  • Preheat oven to 350°F. Grease or line an 8x8 baking dish with parchment.
  • In a large bowl, whisk pumpkin purée, maple syrup, milk, eggs, and vanilla. Stir in oats, pumpkin pie spice, cinnamon, baking powder, and salt until combined.
  • Pour mixture into the baking dish and smooth the top.
  • In a small blender, combine cottage cheese, maple syrup, and vanilla. blend till smooth. Dollop over the oat mixture and gently swirl with a knife for a cheesecake effect.
  • Bake 35–40 minutes or until the center is set (doesn’t jiggle when shake) and edges are golden.
  • Cool slightly, then slice into squares, or serve warm with extra maple syrup or almond butter.

Notes

  • Avoid overblending the cottage cheese mixture — it should be thick enough to swirl without sinking into the oats.
  • These bars taste amazing reheated — pop one in the microwave for 20–30 seconds before serving to bring back that fresh-from-the-oven texture.
