Pumpkin Baked Oatmeal with Cottage Cheese Swirl
This Pumpkin Baked Oatmeal is made with wholesome ingredients like oats, pumpkin purée, and warm spices, then swirled with a creamy cottage cheese mixture for a soft, cheesecake-like texture in every bite, perfect for meal prep or chilly mornings.

I’ve been in my bake-it-once, eat-it-all-week phase lately — and this Pumpkin Baked Oatmeal with Cottage Cheese Swirl is exactly that kind of recipe. It’s like your favorite slice of pumpkin cheesecake and a warm baked oatmeal had a baby — soft, spiced, and perfectly sweet. I’ve been warming these up all week for quick breakfasts and honestly, they taste even better the next day.
If you’ve made my Vegan Pumpkin Oatmeal Bars or Pumpkin Muffins, you already know how much I love sneaking cottage cheese into my baked goods for that creamy, protein-packed twist. And this recipe delivers — it’s one bowl, simple to make, and the cottage cheese swirl gives every bite that dreamy, cheesecake-like texture. Pair it with a Tiramisu Latte or a drizzle of Whipped Honey and you’ve got fall mornings figured out.

Ingredients you’ll need
This baked oatmeal comes together with a handful of simple, pantry staples. Check the recipe card down below for full details!

How to Make Pumpkin Baked Oatmeal
Mix the base: In a large bowl, whisk together pumpkin purée, maple syrup, milk, eggs, and vanilla until smooth.

Add oats, pumpkin pie spice, cinnamon, baking powder, and salt. Stir until combined.

Add the cheesecake swirl: Dollop the cheesecake mixture on top and gently swirl with a butter knife for that signature marbled look.

Bake and enjoy! Let cool slightly before slicing, or serve warm with a drizzle of maple syrup or almond butter.

Tips & Tricks for the Perfect Baked Oatmeal
- Don’t over blend the swirl: When blending the cottage cheese mixture, stop as soon as it’s smooth. If you blend too long, it can turn runny, you want it thick enough to dollop and swirl into the oatmeal without sinking.
- Use old-fashioned oats: Quick oats will make the texture mushy, while steel-cut oats won’t soften enough. Old-fashioned oats are the perfect middle ground for that chewy, cake-like bite.
- Let it cool slightly before slicing: The oatmeal firms up as it cools, making it easier to cut into clean bars (and the flavors get even better).
- Add-ins are always welcome: If you want to switch things up, try adding chopped pecans, chocolate chips, or a handful of cranberries for a festive twist.
How to Serve & Store
Serve these baked pumpkin oatmeal bars warm — either straight from the oven or reheated for a few seconds in the microwave. I love adding a drizzle of maple syrup, a spoonful of almond butter, or even a little whipped honey on top for extra flavor.
If you’re meal prepping for the week, store the bars in an airtight container in the fridge for up to 5 days. They also freeze beautifully — just let them cool completely, then wrap individually and store for up to 2 months. Reheat in the microwave or oven until warm and enjoy that fresh-baked taste all over again.
