Ingredients

For the sweet potatoes:

  • 2 large sweet potatoes (sliced into thin rounds (¼–⅜”))
  • 1-2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp chili powder
  • Black pepper (to taste)

Turkey mixture:

  • 1 lb ground turkey
  • 1 tbsp olive oil (if pan is dry)
  • ½ small onion (finely diced (about 1/2 cup))
  • 2 cloves garlic (minced)
  • 1 packet of mild taco seasoning or use below

Homemade Taco Seasoning

  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp paprika
  • ¼ tsp oregano
  • Salt + pepper to taste
  • ⅓ cup salsa (or 2–3 tbsp tomato paste + splash broth)

Toppings:

  • 1 cup shredded cheese (cheddar, jack, or Mexican blend)
  • ½ cup black beans (drained and rinsed)
  • ½ cup canned corn

Fresh toppings:

  • Sliced jalapeño
  • Fresh cilantro
  • avocado
  • Greek yogurt
  • Lime wedges

Instructions

  • Preheat oven to 400°F. Line a large sheet pan with parchment.
  • Toss sweet potato rounds with oil, salt, paprika, cumin, chili powder, and black pepper. Arrange in a single layer. Bake 20–25 minutes, flipping halfway, until golden and tender.
  • Meanwhile, heat a skillet over medium. Add a drizzle of oil, onion, and turkey. Sauté until browned, breaking up as it cooks. Add garlic, spices, salt, and pepper. Stir in salsa. Simmer 2–3 minutes until thickened.
  • Once sweet potatoes are done, pile turkey on top, scatter beans/corn if using, and sprinkle cheese. Return to oven 5–7 minutes until melty and bubbly.
  • Top with jalapeño, cilantro, avocado/guac, and Greek yogurt. Squeeze with lime before serving.

Notes

  • For an easy, creamy topping, blend together cottage cheese, Greek yogurt, and your favorite hot sauce until smooth. Drizzle over the finished dish for a simple, flavorful homemade sauce.
  • These nachos can also be made in the air fryer. Assemble as directed, then air fry at 375°F for 20 minutes, flipping halfway through. Add the toppings and return to the air fryer for 5 to 8 minutes, or until the cheese is melted and everything is heated through. Work in batches if needed so the basket isn’t overcrowded.
  • If your oven runs hot, start checking the sweet potatoes a few minutes early and loosely tent the pan with foil if they begin to brown too quickly. This helps prevent burning while still allowing them to cook through and stay tender.
