Sheet Pan Sweet Potato Nachos with Ground Turkey
These Sweet Potato Sheet Pan Nachos with Ground Turkey are a fun, flavorful twist on classic nachos, made with crispy roasted sweet potato rounds, seasoned turkey, melty cheese, and fresh toppings. This easy sheet pan nacho recipe is perfect for a quick weeknight dinner, casual entertaining, or anytime you want a lighter-feeling alternative to traditional tortilla chip nachos.

If you love nachos but want to switch things up, these sweet potato nachos with ground turkey are such a fun way to do it. The roasted sweet potato rounds get tender and lightly crispy, then you layer on the taco-seasoned turkey, black beans, corn, and plenty of melty cheese for a super satisfying sheet pan dinner. It gives the same build-your-own, pile-it-high energy as my viral charcuterie nachos, which is probably why I love this recipe so much. It’s all about mixing textures, bold flavors, and lots of toppings so everyone can customize their own plate.
I also love serving these ground turkey sweet potato nachos with a few easy add-ons from the blog, like my cottage-cheese-based ranch dip for drizzling or scooping, Cilantro Lime Crema, a simple chopped salad, or even one of my fresh fruit salads when I want to round out the table. If you’re hosting, these fit right in with the same snacky, shareable vibe as my easy appetizer recipes. It’s the perfect one-pan nacho situation that works just as well for busy weeknights as it does for casual get-togethers.

How to Make
Toss sweet potato rounds with oil, salt, paprika, cumin, chili powder, and black pepper. Arrange in a single layer on a baking sheet. Bake until golden and tender.

Add a drizzle of oil, onion, and turkey to a sauce pan. Sauté until browned. Add garlic, spices, salt, and pepper.

Stir in salsa. Simmer until thickened.

Once sweet potatoes are done, pile turkey on top, scatter beans/corn if using, and sprinkle cheese. Return to oven and bake until melty and bubbly.

Top with jalapeño, cilantro, avocado/guac, and Greek yogurt. Squeeze with lime before serving.

Tips and Tricks
- Slice matters. Aim for evenly sliced sweet potato rounds (about ¼–⅜ inch) so everything roasts and crisps at the same rate. A mandoline makes this super quick if you have one.
- Don’t overcrowd the pan. Spread the sweet potatoes in a single layer with a little space between slices. If they’re piled up, they’ll steam instead of getting those lightly crispy edges.
- Flip halfway. It really does make a difference for browning and keeps the bottoms from getting too soft.
- Simmer the turkey for a minute. After you add the salsa, let the mixture bubble for 2–3 minutes so it thickens up and doesn’t make the nachos watery.
- Layer smart for melty cheese. Add the turkey first, then beans and corn, then cheese on top so everything heats evenly and the cheese melts right into the layers.
- Finish with fresh toppings after baking. Save the avocado, cilantro, Greek yogurt, and lime for the very end so they stay bright and fresh.
- Make it customizable. Set out the toppings like a mini build-your-own bar. It’s perfect for family dinners or casual hosting.
- Great for prep. You can roast the sweet potatoes and cook the turkey ahead of time, then assemble and bake right before serving for a super easy dinner shortcut.

Save and Store
Store any leftover sweet potato sheet pan nachos in an airtight container in the refrigerator for up to 3 days. For best texture, store the roasted sweet potatoes and turkey mixture separately from fresh toppings like avocado, cilantro, and Greek yogurt.
Reheat leftovers on a sheet pan in a 375°F oven for 8–10 minutes to help the sweet potatoes warm through and keep the edges from getting soggy. The microwave works in a pinch, but the sweet potatoes will be softer instead of lightly crisp.
Add fresh toppings and a squeeze of lime after reheating for the best flavor and texture.
