Total Time 10 minutesminutes
Servings 1cup queso
Ingredients
16ozfull fat cottage cheese(I used Good Culture)
1cupcheddar cheese from a block(shredded)
2tsptaco seasoning(I used Siete Mild)
¼cupwater
Garnish with pico de gallo if preferred
Instructions
Add the cottage cheese, taco seasoning, and ¼ cup of water to a blender and blend until smooth and creamy. About 30 seconds.
Add the mixture to a saucepan over medium-low heat and mix in the freshly shredded cheese. Continue to stir until fully melted.
Taste your cottage cheese queso dip and season with salt and pepper, if needed. Garnish with pico de gallo and cilantro if you’d like, serve warm, and enjoy!
Notes
For the creamiest texture, make sure to blend the cottage cheese until completely smooth. If you see any lumps or chunks that got left behind… keep on blendin’!
Use a food processor to grate the cheese, this takes a few seconds and is much quicker than using a traditional cheese grater.
Low heat is best for melting: Keep the heat on medium-low to melt the cheese, otherwise, you may burn your cottage cheese queso! Stir frequently too, to keep it from sticking to the bottom of the pan.
Experiment with seasonings: The added taco seasoning goes a long way, but you can absolutely add others if you’d like. Cayenne pepper is perfect for my spicy peeps, or add a sprinkle of cumin for an earthier flavor.
More topping ideas: Pickled jalapenos, tortilla strips, crumbled queso fresco, or a dollop of Greek yogurt would all be tasty!
