This Cottage Cheese Queso is one of those quick dips that instantly makes any meal feel a little more fun. It blends together in seconds and melts into a smooth, creamy queso flavored with taco seasoning and cheddar. I love serving it with tortilla chips, but it’s also the perfect cheesy addition to recipes like my Sheet Pan Nachos, where you can drizzle it over the top for an extra layer of flavor.

It also pairs perfectly with some of my favorite taco night recipes on the blog. Spoon it over Chicken Tacos, Shrimp Tacos, or my viral Big Mac Tacos for a creamy queso topping, or serve it on the side with my Freezer Burritos or Air Fryer French Fries for dipping when you’re reheating them during the week. It’s an easy way to elevate taco night or add something extra to a casual snack spread.

How to Make Cottage Cheese Queso

Add the cottage cheese, taco seasoning, and ¼ cup of water to a blender and blend until smooth and creamy.

Add the mixture to a saucepan over medium-low heat and mix in the shredded cheese. Continue to stir until fully melted.

Tips and Tricks

  • For the creamiest texture, make sure to blend the cottage cheese until completely smooth. If you see any lumps or chunks that got left behind… keep on blendin’!
  • Low heat is best for melting: Keep the heat on medium-low to melt the cheese, otherwise, you may burn your cottage cheese queso! Stir frequently too, to keep it from sticking to the bottom of the pan.
  • Experiment with seasonings: The added taco seasoning goes a long way, but you can absolutely add others if you’d like. Cayenne pepper is perfect for my spicy peeps, or add a sprinkle of cumin for an earthier flavor.
  • More topping ideas: Pickled jalapenos, tortilla strips, crumbled queso fresco, or a dollop of Greek yogurt would all be tasty!

How to Serve and Store Cottage Cheese Queso Dip

Serve queso while it’s ooey, gooey, and warm alongside your favorite dippers. Tortilla chips are a classic, but this dip also goes well with carrot or celery sticks, air fryer french fries, or my soft pretzel bites!

Store any leftover cottage cheese queso in an airtight container in the refrigerator for up to 3-4 days. I recommend reheating it over medium-low on the stovetop to prevent it from burning. Note that its texture will likely change slightly when reheated. You could also microwave it for a minute or so if you’re in a pinch!

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes
Servings 1 cup queso

Ingredients

  • 16 oz full fat cottage cheese (I used Good Culture)
  • 1 cup cheddar cheese from a block (shredded)
  • 2 tsp taco seasoning (I used Siete Mild)
  • ¼ cup water
  • Garnish with pico de gallo if preferred

Instructions

  • Add the cottage cheese, taco seasoning, and ¼ cup of water to a blender and blend until smooth and creamy. About 30 seconds.
  • Add the mixture to a saucepan over medium-low heat and mix in the freshly shredded cheese. Continue to stir until fully melted.
  • Taste your cottage cheese queso dip and season with salt and pepper, if needed. Garnish with pico de gallo and cilantro if you’d like, serve warm, and enjoy!

Notes

    • For the creamiest texture, make sure to blend the cottage cheese until completely smooth. If you see any lumps or chunks that got left behind… keep on blendin’!
    • Use a food processor to grate the cheese, this takes a few seconds and is much quicker than using a traditional cheese grater.

I just made this with my Good Culture cottage cheese and it’s so delishious. I had my hubby dip a chip and he loved it too! Plus it’s so easy! Thank you.

Very disappointed to have just wasted 16 oz of cottage cheese and a cup of cheese. I heated it on low but it curdled up into a chunky disgusting mess within 20 seconds on the stove

Hi Jade! oh no, what brand of cottage cheese did you use? I use good culture which tends to have a different texture than other cottage cheese brands, it’s much more thick and not as watery. That might be the issue. also, currdeling is natural as it’s cheese, (you can see in the process photos above) but it shouldn’t be chunky. Let me know if you try it again with Good Culture brand.

I am going to try this, but also add nutritional yeast which may give it an even cheesier flavor plus added nutrition.
