Cookie Crisp Cereal is made with all vegan and dairy-free ingredients. This recipe is a homemade take on the classic childhood cereal that we all grew up eating, except the only difference (and it’s a big one) is that this recipe is made with only made with only 5 simple ingredients!
Prep Time 10 minutes
Cook Time 15 minutes
Servings 1 servings

Ingredients

  • 1 cup oat flour
  • 3 tbsp coconut sugar
  • 1/3 cup granola butter (or any other nut butter)
  • 1/4 cup oat milk (or any other milk/nut milk alternative)
  • 1/4 cup mini vegan chocolate chips

Instructions

  • To start, preheat the oven to 350F and prepare a baking dish by lining it with parchment paper or a silicon baking mat.
  • In a large mixing bowl, combine granola butter (or any other nut butter), coconut sugar and oat milk. Mix until ingredients are combined. Add in the oat flour last and mix with a spatula until a thick dough is formed.
  • Dough will be slightly sticky, but that’s okay. Using a small spoon, scoop out a small portion of the batter (about 1/2 tsp, or larger if you want) and roll the dough into a ball with the palm of your hands.
  • Place the cookie on the baking sheet and repeat until the batter is finished. Bake the cookies in the oven for 15 minutes.
  • Remove and let cool completely. Add cereal to a bowl and pour cold oat milk over to enjoy!
