Vegan Cookie Crisp Cereal

I remember when I first tried cookie crisp cereal as a kid and thought to myself, this is GREAT. Cookies for breakfast? Count me in. And i’m not going to lie, my brother’s and I would go through two boxes of cereal a day. It was always a fight to who got to eat the good cereal and the leftover was always the one no one wanted, like unflavored cherrios?
I’ve recently been taking a walk down memory lane and re-creating all my favorite childhood recipes, so I thought, why not take a crack at the amazing cookie crisp cereal. So I headed to the kitchen and to my surprise, it was much easier than I thought it would be.
This cookie crips cereal is made with only FIVE simple ingredients. The baking time is fairly short as well. Let me know if you try this recipe by tagging me on Instagram. Ingredients in homemade cookie crisp cereal
Like all my recipes, I create with simplicity in mind. That was no different when I was in the kitchen creating this cookie crisp cereal recipe. I stuck with the basic’s and used all simple and clean ingredients, did I mention there are only five of them?
- oat flour
- coconut sugar, may sub any other sugar alternative
- granola butter. may sub any other nut or seed butter alternative
- oat milk, may sub any other milk/nut milk alternative
- vegan chocolate chips, may sub regular chocolate chips if not vegan

How to make cookie crisp cereal
Not only are there only five simple ingredients that make up this recipe, but you will also only need one bowl. Which I don’t know about you, but the less dishes I have to clean, the better!
To start, preheat the oven to 350F and prepare a baking dish by lining it with parchment paper or a silicon baking mat.
In a large mixing bowl, combine granola butter (or nut butter), coconut sugar and oat milk. Mix until ingredients are combined. Add in the oat flour last and mix with a spatula until a thick dough is formed.
Dough will be slightly sticky, but that’s okay. Using a small spoon, scoop out a small portion of the batter (about 1/2 tsp, or larger if you want) and roll the dough into a ball with the palm of your hands.
Place the cookie on the baking sheet and repeat until the batter is finished. Bake the cookie crisp cereal in the oven for 15 minutes.
Remove and let cool completely. Add cereal to a bowl and pour cold oat milk over to enjoy!
