Instructions
Roast the Sweet Potatoes
Preheat oven to 425°F. Line a baking sheet with parchment paper.
Add the diced sweet potatoes to the baking sheet. Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper. Toss to coat and spread into an even layer.
Bake for 25–30 minutes, flipping halfway through, until tender and caramelized around the edges.
Cook the Beef
While the sweet potatoes cook, heat a skillet over medium heat.
Add the ground beef and cook, breaking it apart, until browned and cooked through.
Drain excess grease if needed. Stir in the taco seasoning and water. Simmer for 2–3 minutes until the beef is evenly coated and the liquid has absorbed.
Assemble the Bowls
Divide the roasted sweet potatoes between four bowls.
Top with the taco beef, cottage cheese, and avocado.
Finish with a drizzle of honey and hot sauce.
Garnish with cilantro and a squeeze of fresh lime juice if desired.
Notes
Ground turkey or ground chicken can be substituted for the ground beef.
Add your favorite toppings such as diced tomatoes, jalapeños, shredded lettuce, red onion, or sliced green onions.
For a creamier topping, blend the cottage cheese and avocado together until smooth and drizzle over the bowls.
Adjust the amount of honey and hot sauce to suit your preferred flavor balance.
Fresh lime juice adds a bright finish and is highly recommended before serving.
