For the Sweet Potatoes

  • 2 medium sweet potatoes (diced into ½-inch cubes)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

For the Taco Beef

  • 1 lb lean ground beef
  • 1 tbsp taco seasoning (I used Siete mild packet)
  • ¼ cup water

For Assembly

  • 2 cups cottage cheese (divided)
  • 1 large avocado (diced)
  • 2 tbsp honey
  • Hot sauce (to taste)
  • Fresh cilantro (optional)
  • Lime wedges (optional)

Instructions

Roast the Sweet Potatoes

  • Preheat oven to 425°F. Line a baking sheet with parchment paper.
