Use pure maple syrup and not pancake syrup, there is a big difference. Alternatively, you can use agave or honey, however, the flavor will be different.

Almond butter is a healthy fat that I love to use in my baked goods instead of regular butter or oil. You can use any nut or seed butter such as cashew, pecan, peanut, or sunflower seed.

Vanilla extract adds a lovely flavor to any baked good.

Almond flour is a grain free flour that adds both to the flavor and texture of these chocolate chip cookies. I always purchase a big bag from amazon!

Oat flour adds to the texture of these cookies too. You can use store bought or make your own by blending oats until they are in a fine powder.

Baking powder is going to add to the texture, allowing these cookies to have a soft pillowy texture.

Salt balances out all the flavors.

How To Make

ONE: In a bowl, mix together the maple syrup, almond butter and vanilla extract.

TWO: Next, add in the almond flour, oat flour baking powder and salt.

THREE: Fold in the chocolate chips last and add the dough to a baking sheet that’s lined with parchment paper.

Ingredients

  • 1/2 cup maple syrup
  • 1/2 cup runny almond butter
  • 1 tsp vanilla extract
  • 3/4 cup almond flour
  • 1/2 cup oat flour 
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 3/4 cup non-dairy chocolate chips + more for topping

Directions

  1. Preheat the oven to 350F and prepare a baking sheet by lining it with parchment paper.
  2. In a bowl, combine maple syrup, almond butter and vanilla extract. Mix with a spatula until well combined.
  3. Next, add in the almond flour, oat flour, baking powder and sea salt and mix until ingredients are well incorporated.
  4. Fold in the chocolate chips last and using a single cookie scoop, scoop the dough and place it on the prepared baking sheet.
  5. Add on more chocolate chips, if desired and bake for 20 minutes.
  6. Let cool for 5-10 minutes before removing from the baking sheet.
  7. Store in an airtight container on the counter and enjoy within 4-5 days.
