Gluten-free Gingerbread Muffins

Gluten-free Gingerbread Muffins are the perfect sweet treat to make this Holiday season. These muffins are fluffy, moist and have an amazing gingerbread spice flavor. They are made with gluten-free flour, spices like nutmeg, cinnamon and ground ginger. Gingerbread muffins are topped with a sweet and thick vanilla bean frosting. These muffins will definitely be a hit amongst family this holiday season!

What are Gingerbread Muffins?

Gingerbread muffins are a delicious and fluffy muffin that is made with gluten-free flour, and nutty spices like ground ginger, nutmeg and cinnamon. These muffins have a spicey flavor that is balanced out with a vanilla bean frosting. These muffins are perfect for any holiday gathering and are sure to be loved by all!

This recipe is gluten-free which makes it suitable for those that are gluten intolerant. Gingerbread muffins are made using Gluten-free flour from Bob’s Red Mill.

Ingredients in Gluten-free Gingerbread Muffins

If you’ve been here for awhile, you know that I love to keep recipes simple with minimal ingredients. This recipe is no different. We are going to use gluten-free flour and a few spices like cinnamon, nutmeg and ground ginger.

Gluten-free flour– Start with gluten-free flour from Bob’s Red Mill. This ingredient makes the perfect gluten-free base and always makes my baked goods fluffy and moist!

Baking Powder– Baking powder is used to increase the volume and lighten the texture of baked goods

Spices– For this recipe we will use three different spices: cinnamon, nutmeg and ground ginger. These spices combined together create the perfect gingerbread flavor!

Apple Sauce– I love using apple sauce in my recipes. When baking, you can replace the butter in your recipe with half the same amount called for of applesauce. I love to use the apple sauce from Trader Joe’s because the only ingredient is apples. Be careful not to use an apple sauce that contains a ton of added sugar and processed ingredients.

Coconut sugar- Coconut sugar is a palm sugar produced from the sap of the flower bud stem of the coconut palm. I like to use the one from BareOrganics.

Kitchen tools needed to make this recipe:

  • Two mixing bowls: One medium, one large
  • Rubber spatula
  • Muffin tin
  • Non-stick spray
  • Measuring cups

How to make delicious Gingerbread Muffins

To start, you will need to preheat oven to 350F and line a muffin tin with liners or coat with non-stick spray. The worst thing ever is getting through the entire recipe and forgetting to preheat the oven!

Then, in a large bowl, combine the gluten-free flour, baking powder, salt, nutmeg, cinnamon, ginger and ground flax.

Next, in a separate bowl, combine apple sauce, coconut oil, coconut sugar, eggs, vanilla and almond milk. Using a whisk, mix ingredients until they are well incorporated.

Once you have your two bowls of dry and wet ingredients, you will then pour the wet ingredients over dry and mix with a spatula until mixture is well combined.

Coat muffin tins with non-stick spray and then pour batter into muffin tins and fill 3/4 of a way. These will rise during baking time.

Bake for muffins in the preheated over for 18-20 minutes.

Once the muffins are baked, remove from the oven and allow to cool completely. Then, make the frosting that will drizzle on top!

To make the frosting simply combine all ingredients in a bowl and whisk until a thick frosting forms. If mixture becomes too watery, add in more powdered sugar. If mixture is too thick, add in a splash more of almond milk.

Pour frosting over cooled muffins and enjoy!

Ingredients

  • 2 cups gluten-free flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp nutmeg
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 3 Tbsp ground flax
  • 1/2 cup apple sauce
  • 1/2 cup coconut oil, melted.
  • 1/3 cup coconut sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1/3 cup almond milk
Frosting
  • 3/4 cup powdered sugar
  • 1 tsp vanilla
  • 1 Tbsp almond milk

Frosting
  1. Add all ingredients to a bowl and whisk until a thick frosting forms. If mixture becomes too watery, add in more powdered sugar.
