Healthy Oven Baked Chicken With Vegetables is a perfect meal to prep and enjoy throughout the week. It’s made in one pan and served with quinoa and a delicious miso dressing.

The Only Healthy Oven Baked Chicken Recipe You’ll Need

This is actually my first meat recipe that i’m sharing since the three years that I started Lovely Delites. When I started this blog I was fully vegan, but since then I have evolved as a person, my mindset has shifted and with that so has my diet. I still eat mostly plant-based, but I do eat meat about 1-2 times per week.

This healthy oven baked chicken has been a meal that’s been on repeat for me. It’s truly so simple to make and takes delicious all week long. The chicken is made with broccoli and cauliflower and is roasted on one baking sheet. I love to enjoy this meal with quinoa and a delicious miso dressing.

Ingredients in this Healthy Oven Baked Chicken Meal

This oven baked chicken meal is made with simple and healthy ingredients, but I do have to say the miso dressing is what makes this meal so delicious!

organic chicken breast- I prefer using organic chicken since it’s more nutrient dense and typically contains less fat and harmful ingredients.

quinoa- quinoa that’s cooked in chicken or vegetable broth for more flavor and nutrients.

chicken or vegetable broth- I love cooking my quinoa in chicken or vegetable broth for more flavor and nutrients.

cauliflower and broccoli- for this meal I used cauliflower and broccoli which I think tastes amazing with the miso dressing, however, you can use any of your favorite vegetables here.

miso dressing

white miso paste- white miso paste has such an ingredient flavor and adds a delicious taste to any meal.

sesame seed oil- sesame seed oil really adds flavor to this sauce as it contains a wonderful nutty flavor.

red wine vinegar- red wine vinegar to give this dressing a tangy flavor

extra virgin olive oil- helps make give this a dressing

turmeric and black pepper- anti-inflammatory, when combined with black pepper activates and also gives this dressing a wonderful earthy flavor.

ginger– I have used both grated ginger and ginger powder which really adds a lovely flavor to this dressing.

Ingredients

Chicken
  • 2 large organic chicken breasts seasoned with salt, pepper and paprika
  • 1 Tbsp minced garlic, or less depending on preference
Veggies
  • 2 cups broccoli
  • 2 cups cauliflower
  • salt and pepper to taste
  • 1 tsp EVOO
Quinoa
  • 1 cup quinoa cooked with 2 cups vegetable broth
Miso Dressing
  • 1 tbsp miso paste
  • 2 tbsp sesame seed oil
  • 1/4 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 2 tsp turmeric
  • 1 tsp black pepper
  • 1 tbsp freshly grated ginger, or 1 tsp ginger powder

Directions

  1. Preheat oven to 475F and prepare a baking sheet by lining it with foil or parchment paper.
  2. In a large mixing bowl, add in broccoli and cauliflower and season with salt, pepper and EVOO. Mix well and spread on baking sheet.
  3. Next, chop chicken breast into bite sized pieces and add to the mixing bowl. Drizzle with 1 tsp of EVOO, then season with salt, pepper, paprika and minced garlic. I like to add in 1 Tbsp of minced garlic, but this is your preference. Mix well until each piece is well coated. Add to the baking sheet with the veggies and bake for 20-25 minutes or until internal temperature of the chicken reads 165F.
  4. Remove from the oven and let rest for 5 minutes.
  5. While the veggies and chicken are baking, prepare the quinoa according to package. I like to cook mine in vegetable broth rather than water for more flavor.
  6. In the meantime, prepare the miso dressing by adding all of the ingredients to a blender and blending until smooth and creamy.
  7. Arrange bowls by adding quinoa to the bottom and layering with the chicken and veggies. Drizzle with miso turmeric dressing and enjoy.
