    Tips and Tricks

    • Add milk 1 tablespoon at a time to get that soft, pressable cookie dough texture (not too dry, not sticky)
    • Use creamy almond butter or peanut butter for the smoothest consistency
    • Press the dough firmly and evenly so the bark holds together when breaking
    • Let the chocolate cool slightly before pouring so it doesn’t melt into the dough layer
    • For clean breaks, let it sit at room temp for 2–3 minutes before snapping.

    How to Save and Store

Store your cookie dough bark in an airtight container in the freezer for up to 2–3 weeks. For the best texture, let it sit out for a couple minutes before eating so it softens slightly but still has that perfect snap.

This Cookie Dough Bark is a quick and easy no-bake dessert made with almond flour, protein powder, maple syrup, and chocolate. It’s freezer-friendly, simple to prep, and perfect for satisfying a cookie dough craving in minutes.
    Prep Time 10 minutes
    Chill Time 1 hour
Total Time 1 hour 10 minutes
    Servings 10 pieces

    Ingredients

    Cookie Dough Layer

    • 1 cup almond flour
    • 1/3 cup vanilla protein powder (I used Ritual vanilla)
    • 1/4 cup almond butter (or peanut butter)
    • 1/4 cup maple syrup
    • 1 tsp vanilla extract
    • Pinch of salt
    • 1/3 cup mini chocolate chips
    • 2-4 tbsp milk of choice (as needed for texture)

    Chocolate Top Layer

    • 3/4 cup dark chocolate chips
    • 1 tsp coconut oil

    Instructions

    Make the cookie dough base:

    • In a bowl, mix maple syrup, almond butter, and vanilla until smooth.
    • Add almond flour, protein powder and salt and mix until a soft dough forms. Depending on the protein powder used, you may need to add in a little milk until you have a dough that you can press into. Add in 1 tbsp at a time, until desired consistency is reached.
    • Fold in chocolate chips last.
    • Line a baking sheet with parchment paper and press the dough into an even layer (about 1/4–1/2 inch thick). Pop it in the freezer while you melt the chocolate.
    • Microwave chocolate chips with coconut oil in 20–30 second intervals. Stirring until smooth.
    • Pour melted chocolate over the cookie dough layer and spread evenly.

    Freeze:

    • Place in the freezer for 1–2 hours, or until fully set.
    • Remove and break into bark-style pieces with your hands or using a knife and enjoy!

    Notes

    • Protein powder brands vary, adjust milk as needed for the desired cookie dough texture.
    • You can swap almond butter for peanut butter or even cashew butter if you’d like!
    • Thickness will affect freeze time, thinner bark sets faster, thicker will need a little more time.

Love it! My dough is still a bit sticky after hours in the freezer. Did I do something wrong? Love so many of your recipes!

so glad you enjoyed it!! did you use the same brand of protein powder? that could be the biggest key difference in texture. if it feels a little too wet you could always add a touch more of protein powder and/or almond flour 🙂
