Single Serve Chocolate Chip Cookie

Single Serve Chocolate Chip Cookie is a simple and quick recipe for when you’re craving a freshly baked cookie, but don’t want to make an entire batch. This single serve cookie is both vegan and gluten-free and is made with healthy for you ingredients like almond butter, maple syrup, almond flour and gluten-free flour.

Growing up I would always have a dollar in change on my so I can purchase a giant fresh baked cookie from the school cafeteria. They had this same cookie that i’m talking about in elementary, jr high and high school. It was fresh baked, warm and the most perfect thing ever. I would eat this cookie with a bag of munchies thinking it was a suitable lunch for a teenager.

Fast forward to today, I do not know how I got by with just having that for lunch, but I digress. I wanted to re-make that single serve cookie but with better-for-you ingredients, so that’s exactly what I did. This cookie is so delicious, quick to make and will leaving you feeling happy and satisfied.

I made this cookie in my air fryer, but if you don’t have an air fryer, don’t worry! You can can still make it in your oven! The temperature will be the same, but the cooking time may vary.

The ingredients list in this single serve cookie is short and sweet. I tried to create this cookie with simplicity in mind, so that almost everyone wanting to make it, can! This recipe is both vegan and gluten-free so it can also be enjoyed by all!

  • almond butter
  • maple syrup
  • vanilla
  • almond flour
  • gluten-free flour
  • salt
  • baking powder

How to make vegan and gluten-free cookie

As I mentioned previously, this cookie cannot be any simpler to make. From start to finish you’ll be enjoying a freshly baked cookie in 25 minutes or less (depending on how quick you mix the ingredients)

I made this cookie in my air fryer, but you can also make it in your oven! The cooking time may vary, but the end result will still be the same.

To start, combine almond butter, maple syrup, and vanilla together in a large mixing bowl. Add in almond flour, gluten-free flour, salt and baking powder last and mix together using a rubber spatula.

Fold in non-dairy dark chocolate chips, then roll the dough into a large ball. Place it on a small piece of parchment paper, and using the palm of your hand flatten the top slightly. Top with more chocolate chips, then air fry for 12-15 minutes.

Allow the cookie to cool off for a few minutes before digging in to. ENJOY!

To make the cookie in the oven- use the same exact method as above, bake the cookie for 12-15 minutes and check to see where it’s at. If it needs more time, cook for an additional 2-5 minutes!

Ingredients

  • 2 Tbsp almond butter
  • 2 Tbsp maple syrup
  • 1/4 tsp vanilla
  • 2 Tbsp almond flour
  • 2 Tbsp gluten-free flour
  • 1/4 tsp baking powder
  • pinch of sea salt
  • 2 Tbsp non-dairy dark chocolate chips

Directions

Air Fryer Method
  1. To start, combine almond butter, maple syrup, and vanilla together in a large mixing bowl.

  4. Top with more chocolate chips, then air fry at 350F for 12-15 minutes.
  5. Allow the cookie to cool off for a few minutes before digging in to. ENJOY!
Oven Method
  1. Preheat oven to 350F. Follow directions the same as above.
  2. Bake cookie for 12-15 minutes. Adding an additional 2 minutes at the end if needed.

I have made this cookie numerous times and I find it is the perfect single serve chocolate chip cookie recipe out there! The ingredients are pantry friendly and things I always have in hand. I like the convenience of using an air fryer. I find it has the right balance and isn’t overly sweet. Definitely my favorite cookie recipe to date!
