Single Serve Chocolate Chip Cookie

Growing up I would always have a dollar in change on my so I can purchase a giant fresh baked cookie from the school cafeteria. They had this same cookie that i’m talking about in elementary, jr high and high school. It was fresh baked, warm and the most perfect thing ever. I would eat this cookie with a bag of munchies thinking it was a suitable lunch for a teenager.
Fast forward to today, I do not know how I got by with just having that for lunch, but I digress. I wanted to re-make that single serve cookie but with better-for-you ingredients, so that’s exactly what I did. This cookie is so delicious, quick to make and will leaving you feeling happy and satisfied.
I made this cookie in my air fryer, but if you don’t have an air fryer, don’t worry! You can can still make it in your oven! The temperature will be the same, but the cooking time may vary.

The ingredients list in this single serve cookie is short and sweet. I tried to create this cookie with simplicity in mind, so that almost everyone wanting to make it, can! This recipe is both vegan and gluten-free so it can also be enjoyed by all!
- almond butter
- maple syrup
- vanilla
- almond flour
- gluten-free flour
- salt
- baking powder
How to make vegan and gluten-free cookie
As I mentioned previously, this cookie cannot be any simpler to make. From start to finish you’ll be enjoying a freshly baked cookie in 25 minutes or less (depending on how quick you mix the ingredients)
I made this cookie in my air fryer, but you can also make it in your oven! The cooking time may vary, but the end result will still be the same.
To start, combine almond butter, maple syrup, and vanilla together in a large mixing bowl. Add in almond flour, gluten-free flour, salt and baking powder last and mix together using a rubber spatula.
Fold in non-dairy dark chocolate chips, then roll the dough into a large ball. Place it on a small piece of parchment paper, and using the palm of your hand flatten the top slightly. Top with more chocolate chips, then air fry for 12-15 minutes.
Allow the cookie to cool off for a few minutes before digging in to. ENJOY!
To make the cookie in the oven- use the same exact method as above, bake the cookie for 12-15 minutes and check to see where it’s at. If it needs more time, cook for an additional 2-5 minutes!

I legit make this multiple times a week and both me and my 21 month old adore it. When she sees I have it, she climbs in my lap and smiles in my face until I give her some 🤣
I just made these and wow!!! Sooo good. Thick and gooey and not dry at ALL. Definitely making this again 🙂
