How to Make
In a blender, combine the milk, honey, vanilla bean paste, carrots, cinnamon, nutmeg, ginger, and salt. Blend until smooth and creamy.

In a bowl, stir together the Greek yogurt and chia seeds.

Pour in the carrot milk and mix well until fully combined.

Fold in the raisins and chopped nuts if using. Let the mixture sit for 5 minutes, then stir again to prevent clumping.

Cover and refrigerate for at least 4 hours, or overnight (best), until thick and pudding-like.

The next day. Top with a gently top with a thin layer of Greek yogurt, a sprinkle of fresh grated carrots, and extra nuts or a drizzle of honey.

Tips and Tricks
- Stir chia pudding twice before refrigerating (once after 5 minutes) to prevent clumping.
- Adjust consistency with a splash of milk if too thick, or more chia if too thin.
- Chill overnight for the best flavor and texture.
- Add layers or toppings like yogurt, nuts, or honey for that carrot cake feel.
How to Serve and Store
Serve chilled straight from the fridge, either on its own or topped with extra shredded carrots, chopped nuts, coconut flakes, or a drizzle of honey for that carrot cake vibe. You can also layer it with yogurt for a more dessert-style feel.
Store in an airtight container or sealed jars in the fridge for up to 4–5 days, making it perfect for meal prep. Give it a good stir before serving and add a splash of milk if it thickens too much.

Wayyyyyy too much nutmeg
Thanks for the feedback! 😊 Spice preferences can definitely vary. Feel free to reduce the nutmeg to ¼ teaspoon or even omit it if you prefer a milder carrot cake flavor.
