Buffalo Chickpea Caesar Salad
Usually when I’m ready to eat lunch, I want to reach for something that is going to be quick, easy and healthy. This buffalo chickpea salad is one of my favorites to make for busy lunch days. I make the buffalo chickpeas in the air fryer, which always makes the chickpeas have a perfectly nice and crispy texture.
However, if you don’t have an oven, no worries. I gotchu. You can still make this recipe in the oven or even on the stovetop! It’s really so versatile and can be made by all.
I love to also chopped my own romaine lettuce and use a vegan parmesan cheese. From start to finish this recipe will be ready in 15 minutes! The longest part is letting the chickpeas bake in the air fryer/oven. Let me know if you try it by tagging me on Instagram. - romaine lettuce
- parmesan cheese (vegan or regular)
- your favorite caesar dressing
- your favorite buffalo sauce
How to make air fried buffalo chickpea salad
I always start with the chickpeas, this way, while they are in the air fryer I can prep the rest of the ingredients so save on time.
To start, drain and rinse the chickpeas really well. Then, add them to a bowl and pour your favorite buffalo sauce over. I like to use the one from Primal Kitchen Foods, but you can use whichever one you prefer!
Shake the bowl or toss with a spoon until the chickpeas are well coated. Then, pour the chickpeas into your air fryer and air fry at 350F for 15-20 minutes. Stopping and shaking halfway through.
In the meantime, wash and cut your romaine lettuce and add to a bowl. Sprinkle on your favorite parmesan cheese, I like to use the one from Follow Your Heart, which is vegan. However, you can use whichever parmesan cheese that you’d like.
When the buffalo chickpeas are done air frying, remove and add on top of your prepared salad, then drizzle with your favorite caesar dressing. Again, I love the one from Primal Kitchen Foods!
That’s it, so quick so easy and so good! You can save the rest of the chickpeas in an air tight container in the fridge and enjoy within 4-5 days.
