Ingredients And Substitutions

The base of this cookie is made with almond flour, I love getting a big bag of it from amazon which is such a steal. Alternatively, you can use oat flour.
Baking powder is going to help these cookie rise during bake time and have a fluffy texture.
Sea salt helps to balance out all the flavors.
Use a creamy all natural almond butter instead of a thick one. Look for an almond butter where the only ingredient is almonds. I get mine from Trader Joes.
Eggs work as the binding agent and also helps to provide a fluffy texture.
Pure maple syrup is one of my favorite sweeteners to use in my recipes, it not only gives a lovely flavor but it’s unrefined which I love. Alternatively, you can use agave or honey but it will change the flavor profile.
Vanilla extract tastes amazing in any baked good.
Roasted peanuts sprinkled on top for that traditional snickers crunch.
To keep this recipe dairy free, use a dairy free chocolate. Otherwise, you can use any chocolate of your preference.
How To Make
ONE: In a bowl, mix together the almond butter, maple syrup, egg and vanilla extract.


TWO: Next, add in the almond flour, baking powder and salt. Mix well until a thick dough is formed.


THREE: Using a double cookie scoop and roll the dough into a ball. Place it on a baking sheet that is lined with parchment paper and use your palm to press down on it to flatten slightly.


FOUR: Next, use the back of a spoon and make an indent in the center of the cookie. Bake for 15 minutes.



SIX: Let cookies cool completely. When ready make the healthier caramel by mixing together almond butter, maple syrup and vanilla extract. Add a dollop to the center and spread evenly.



SEVEN: Sprinkle each cookie with chopped peanuts and a drizzle of melted chocolate. Let the chocolate firm up and enjoy!


Tips And Tricks
Dough tends to be a bit on the sticky side, so I recommend coating your palm with a bit of oil when pressing down to flatten them. This also works great for the back of the spoon when making the indentation.
Make sure the indentation is deep and wide enough, this is where the caramel is going to go after baking.
Let cookies cool completely before add on the caramel mixture.
You can use the almond butter caramel, date caramel or regular caramel- it’s really just preference.

How To Serve And Store
Serve these Gluten Free Snickers Cookies with caramel, roasted peanuts and a drizzle of melted chocolate.
Store in an airtight container on the counter and enjoy within 3-4 days. Otherwise, you can store in the fridge up to 10 days or the freezer for up to 60 days.
Taste And Texture
Gluten Free Snickers Cookies taste like a snickers cookie. The base is soft, moist and nutty. The almond butter caramel tastes like a very sweet almond butter that has notes of caramel.
The cookie is soft, chewy and crispy on the edges.

Frequently Asked Questions
Oat flour will work too! But the texture will be slightly different.
Date caramel works great, which is just soaked and blended dates. Otherwise, use regular store-bought or homemade caramel.
I have not tested the cookie recipe without an egg yet, but I would suggest using a chia egg instead as a binging agent to make these completely vegan.
