Chicken enchilada casserole

Ingredients You’ll Need (Plus Easy Swaps!)

Cooked, shredded chicken – Use cooked chicken breast or rotisserie chicken for an easy shortcut — both work great and soak up the sauce.

Green enchilada sauce – Store-bought or homemade both work here depending on how much time you have!

Plain Greek yogurt – Adds a creamy, tangy layer without needing heavy cream; you can swap for sour cream if you prefer.

Diced green chiles – Mild or hot depending on how much spice you like.

Shredded cheese – Cheddar, Monterey Jack, or a blend melts perfectly; pepper jack is a great swap if you want extra heat.

Corn tortillas – I love the flavor of corn tortillas here, but small flour tortillas work too.

Garlic powder, onion powder, salt, and pepper – A simple seasoning blend to bring everything together. You can swap in fresh garlic or onion if you’d like!

Optional toppings – Avocado, cilantro, lime wedges, hot sauce, and extra cheese make these enchiladas even better — pile on whatever you love.

How to Assemble and Bake Chicken Enchiladas

Preheat your oven and mix the filling. In a large bowl, combine the shredded chicken, most of the green enchilada sauce (save a little for topping), Greek yogurt or sour cream, green chiles, garlic powder, onion powder, and a good pinch of salt and pepper. Mix until everything is well combined.

Start by adding a little enchilada sauce to the bottom of your dish. Layer in the quartered tortillas, a scoop of the chicken mixture, and a sprinkle of cheese. Keep layering until everything’s used up, finishing with more cheese and a drizzle of the sauce you saved.

Bake. Pop the dish into the oven and bake for 20–25 minutes, or until the enchiladas are hot, bubbly, and golden around the edges.

Top and serve. Let the enchiladas rest for about 5 minutes before serving. Then pile on some fresh cilantro, diced avocado, a squeeze of lime, or any of your favorite toppings.

My Best Chicken Enchilada Hacks

  • Don’t overfill your layers: A light hand when layering keeps everything balanced and prevents the tortillas from getting soggy or tearing.
  • Save a little extra sauce for the top: That reserved sauce helps keep the top layer nice and moist while baking — plus it gives you those dreamy, golden, bubbly edges.
  • Let them rest before serving: Give the enchiladas about 5 minutes after baking to set up — it makes them easier to slice and scoop without falling apart.

Fun Ways to Customize Chicken Enchiladas

Ground Turkey or Beef: Swap the shredded chicken for cooked ground turkey or ground beef. Just brown it first and season lightly with salt, pepper, and a pinch of cumin or taco seasoning.

Pulled Pork: Use leftover pulled pork for a smoky, hearty twist that pairs perfectly with the creamy sauce.

Shredded Beef: Slow-cooked or leftover shredded beef works great for a richer, more savory flavor.

Vegetarian Option: Skip the meat and use black beans, sautéed veggies, or a combo of beans and corn for a filling, plant-based version.

Spicy Swap: If you still want chicken but with more heat, try mixing in a little hot sauce or using a spicy green enchilada sauce!

How to Store and Reheat Freezer Friendly Chicken Enchiladas

To serve: Once the enchiladas are out of the oven, give them about 5 minutes to cool and settle — it makes slicing and serving way easier. Then have fun with the toppings! Fresh cilantro, creamy avocado, a squeeze of lime, extra cheese, or a little hot sauce are all delicious on top. I love serving these with a simple side salad, some rice, or a scoop of beans to round out the meal.

To store: Leftover enchiladas can be stored in an airtight container in the fridge for up to 3–4 days. Reheat individual portions in the microwave or pop the whole dish back into a 350°F oven until warmed through.

To freeze: If you’re making these ahead, assemble the enchiladas but hold off on baking. Cover the dish tightly with foil and freeze for up to 2 months. When you’re ready to eat, thaw overnight in the fridge (if you can!) and bake at 375°F, adding an extra 10–15 minutes to the bake time if needed. You can also bake straight from frozen — just plan to add about 20–30 extra minutes.

These Freezer-Friendly Green Enchilada Casserole squares are layered with shredded chicken, creamy Greek yogurt, green enchilada sauce, and melty cheese for the ultimate easy weeknight dinner. They freeze and reheat beautifully, making them a perfect make-ahead meal for busy families or postpartum meal prep.
Prep Time 15 minutes
Cook Time 25 minutes
Total Time 45 minutes
Servings 4 servings

Ingredients

  • 2-3 cups cooked shredded chicken breasts (can use rotisserie chicken)
  • 14-16 oz green enchilada sauce
  • 1 cup plain Greek yogurt
  • 4 oz canned diced green chiles
  • 1 ½ cups shredded cheese (cheddar, monterey jack, or a blend)
  • 8-10 small corn tortillas (cut into quarters)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt + pepper to taste
  • Optional toppings: avocado (cilantro, lime wedges, extra cheese, hot sauce)

Instructions

  • Preheat oven to 375°F and lightly grease a 9×9 baking dish.
  • In a large bowl, mix together shredded chicken, green enchilada sauce (reserving a little to drizzle on top), Greek yogurt, green chiles, garlic powder, onion powder, and a big pinch of salt and pepper.
  • Start with a little sauce on the bottom of the dish, then layer tortillas, chicken mixture, and cheese. Repeat layers until everything is used, finishing with cheese and a drizzle of the remaining enchilada sauce on top.
  • Bake for 20–25 minutes, or until bubbly and golden around the edges.
  • Let it rest for 5 minutes, then top with fresh cilantro, avocado, or a squeeze of lime if you’re feeling extra.

To Freeze

  • If you’re prepping these ahead of time, assemble the enchiladas but don’t bake them yet. Cover the dish tightly with foil and freeze for up to 2 months. When you're ready to cook, thaw them overnight in the fridge if possible, then bake at 375°F, adding an extra 10–15 minutes if needed. No time to thaw? You can bake straight from frozen — just add about 20–30 extra minutes to the bake time.

Notes

  • Rotisserie chicken is a huge time-saver. If you’re short on time, using a store-bought rotisserie chicken makes this recipe even faster to throw together.
  • Don’t skip the resting time. Letting the enchiladas rest for a few minutes after baking helps them set up and makes slicing and serving way easier (and less messy!).
  • Make it ahead for busy weeks. These enchiladas freeze beautifully, so it’s worth making a double batch — one for tonight and one to stash away for later!

Followed recipe but subbed in organic ground beef. I used fresh Monterey jack and Siete green enchilada sauce. Flavor was next level. I can’t believe how well the Greek yogurt blended in. You would never know it was there. Awesome recipe! Keep these gems coming ❤️
