Inside Out Stuffed Shells

This recipe was created when I wanted to make stuffed ricotta shells, but the store was out of the jumbo shells so I sufficed with the medium sized ones. Inside of stuffing each mini shell, I decided to mix in the dollops of ricotta instead which resulted in a creamy and delicious pasta!
Sometimes the best recipes are created when you least expect it. I posted this over on my instagram and received so many requests for the recipe, so I made it again, photographed it and am now sharing with you all!
As I mentioned before, this is an insanely easy recipe, but also totally customizable to your liking. Feel free to use whichever pasta sauce that you like, add in some seasoning or even your choice of protein! Let me know if you try it by tagging me over on Instagram, I LOVE seeing your remakes.

This recipe was created by accident. I really wanted to make stuffed shells, but like I mentioned before the store was out of the jumbo ones so I sufficed with the medium sized ones. With that being said, the ingredient list is short and sweet but also totally customizable. Feel free to add in whatever ingredients you’d like to make it your own!
- medium sized shell pasta
- your favorite pasta sauce
- spinach
- ricotta cheese
How to make inside out stuffed pasta
This pasta recipe is perfect for those busy weeknights. From start to finish you’ll be enjoying this pasta in just about 30 minutes.
To start, cook pasta according to package and don’t forget to reserve some pasta water to mend the sauce and pasta together. It’s an important part!
In the meantime, heat some EVOO in a large sauce pan and add in the spinach. Saute the spinach for a few minutes until it begins to wilt.
Add in your sauce next and any additional ingredients such as garlic or seasoning. Then, when the pasta is done cooking, reserve about 1/3 cup of pasta water and drain the rest.
Add your cooked pasta to the saucepan and mix until well combined. Add in the pasta water and mix once more.
Then, mix in the ricotta cheese until well blended and the pasta is creamy. That’s it!
