I personally love using dark chocolate as it adds a nice deep and tart flavor that pairs nicely with the bursting pomegranate seeds, but feel free to use milk or white chocolate instead. To keep this recipe vegan, be sure to use a vegan or dairy free chocolate.
You can use store bought pomegranate seeds, or remove them from a pomegranate yourself.
For the toppings I used chopped pistachios and shredded unsweetened coconut! Feel free to get creative here and use your favorite toppings instead!

How To Make
ONE: Start by melting the dark chocolate in the microwave in 30 seconds increments or on the stovetop in a double broiler. You may need to add in a tablespoon of coconut oil or other oil to help the chocolate melt and become smooth and creamy.


TWO: Mix in the pomegranate seeds to the chocolate until well combined. Next, lay a piece of parchment paper on a small baking sheet and then pour the mixture over and spread evenly.


THREE: Top with chopped pistachios and shredded unsweetened coconut and place in the freezer for a minimum or 1 hour or until the chocolate is completely hardened. Break apart with your hands and enjoy!
