Quick and Easy Spicy Cucumbers

I posted a crispy rice recipe over on my tiktok that had spicy tuna layered on top. One of the most asked questions was, “what can I do if I wanted to make this vegetarian”. So, I got into the kitchen and whipped up these spicy cucumbers that taste great on top of this crispy rice for a great vegetarian option.
These spicy cucumbers are made with really simple ingredients and come together in just about 30 minutes. These are great for snacking on throughout the day or as an extra bonus to your favorite recipe. Try adding these to jasmine rice, your favorite salad, or dipping them in hummus!

Ingredients in spicy cucumbers
This spicy cucumber recipe comes together in just about 30 minutes and only requires a handful of ingredients! Grab these below and let’s get started:
- cucumber
- soy sauce
- rice vinegar
- sesame oil
- honey
- chili oil crunch, or just chili oil
- sesame seeds
- salt and pepper
How to make spicy cucumbers
This spicy cucumber recipe is both quick and easy to make, but tastes high quality and has a ton of flavor.
Start by washing your cucumber to remove any pesticides. Then, dry off your cucumber and cut off the ends.
Next, scoop out the seeds with a spoon and discard. Once you have the hallowed out cucumbers, slice them in 1/4-1/2″ thick, depending on your preference.
Place the cucumbers in a colander and sprinkle with salt. This will remove any excess liquid from the cucumbers, allowing them to really soak up the marinade. Let the salted cucumbers rest for 15 minutes.
In the meantime, make the marinade sauce by combining all ingredients in a medium bowl. Whisking until well combined.
When the cucumbers are done resting, rinse well with water and add to a shallow bowl. Pour the marinade on top of the cucumbers and mix until each one is well coated and they are submerged in the marinade. Cover and place in the fridge for 20-30 minutes.
