Spicy Garlic Crunch Cucumber Salad
This spicy garlic cucumber salad is crisp, refreshing, and packed with bold flavor from chili oil, garlic, and a tangy soy-based dressing. Made with simple ingredients in under 30 minutes, it’s the perfect quick side dish, snack, or topping for bowls, rice, and more.

I originally made this as a vegetarian option after sharing my crispy rice with spicy tuna, so many of you asked what to swap in, and these spicy cucumbers were the answer. They bring that same punchy, savory, slightly spicy flavor but with a fresh crunch that works so well layered on crispy rice or even scooped up straight from the bowl (highly recommend).
Now I keep a batch in the fridge because they go with everything. How to Make
Wash and dry the cucumber, then cut off the ends. Lightly smash it using the side of a knife or a rolling pin to create cracks. Slice into ½-inch pieces.

In a bowl, whisk together soy sauce, rice vinegar, lime juice, sesame oil, honey, chili oil, garlic, and sesame seeds until well combined.

Add the cucumbers to a bowl and pour the sauce over top. Toss until everything is evenly coated.

Cover and refrigerate for 30–60 minutes (or up to 2 hours for deeper flavor). Right before serving, top with crushed peanuts, green onions, and an extra drizzle of chili oil crunch and enjoy.

Tips and Tricks
- Smash cucumbers gently, this helps the dressing soak in better
- Don’t skip salting, it keeps the cucumbers crisp, not watery
- Adjust chili oil to control spice level

How to Serve and Store

Instructions
