Quick and Easy Veggie Fried Rice

I don’t know about you, but when it comes to dinner time I want to make something that is going to be quick, healthy and satisfying. This veggie fried rice is the perfect meal to make for dinner or even as a side dish. From start to finish this recipe will be ready in 30 minutes and tastes even better served the next day as leftovers.
This recipe is also completely customizable, meaning you have the freedom to add in any veggies or protein that you’d like. As long as you keep the base of the fried rice, you can alter/change anything and make it your own!
This is also a great recipe to use if you have any leftover white rice that you’re wondering what you could possibly do with it. Simply jazz it up a bit by adding in some soy sauce, fried egg and veggies!

Ingredients in Veggie Fried Rice
I stuck to the basics when it came time to create this recipe. Like all of my dishes or baked goods, I love to stick to simple ingredients and not over-complicate things. I truly believe this is the key to simple, yet delicious cooking. Grab these ingredients below, or any other substitutes and you’ll be ready to make this Fried Rice!
- white rice– precooked/chilled.
- eggs
- ghee– or olive oil/ butter.
- garlic– fresh or minced
- veggies– onion, carrot, celery, peas, and corn.
- soy sauce
- sesame seed oil
- seasoning- garlic powder, onion powder, ground ginger, salt and pepper.
- green onions
- sesame seeds
How to make veggie fried rice
Making veggie fried rice is simple and stress-free. Once you have your pre-made and chilled white rice, it will only take all of 15-20 minutes to assemble.
For this recipe or any fried rice recipe, you will need to have pre-made and chilled rice. This works great for leftovers, or if you make the rice earlier in the day or the day before. You want the rice to be chilled so that once it’s being cooked it won’t turn to mush.
To start, prepare your veggies by dicing the onions, carrots and celery. For this recipe I used frozen peas and corn, you can use all frozen recipes if you desire or all fresh. It’s really up to you.
Preheat a large sauté pan over medium/low heat and add in your ghee. I love using ghee because I believe it adds an amazing flavor, however you can use EVOO or even regular butter.
Once the pan is preheated, add in the onion and garlic. Allow these to simmer while mixing occasionally for a few minutes. Then, add in the carrots and celery. Again, allow these to simmer for a few minutes to get nice and soft.
Next, add in the frozen peas and corn and mix until the ingredients are well combined. Using your spatula, make a whole in the center of the pan by pushing all the veggies to the side. Then, crack both eggs in the center and whisk until they are scrambled. Mix in the veggies with the eggs.
After you have completed those steps, add in the chilled white rice and mix until the veggies are well combined. Drizzle in the soy sauce and sesame seed oil and mix once again.
Season the fried rice next and sprinkle with salt and pepper to taste. That’s it! Remove the fried rice from the heat and serve warm. Top it off with sesame seeds and freshly chopped green onion and enjoy!

Substitutions
As I mentioned before, you can make this recipe completely you own by adding in your favorite mix of veggies or protein. This fried rice will taste great with chicken, shrimp, salmon or beef!
