Samoa Cookie Baked Oats

I’ve been on a girl scout cookie kick lately. The past month I’ve made samoa girl scout cookies two different ways. You can find both recipes here and here. After making these recipes, I had a ton of leftover date caramel, toasted coconut and dark chocolate. So, of course, I had to make a third recipe, que Samoa Cookie Baked Oats.
These baked oats are really easy to make, they come together in about 45 minutes and have an amazing creamy dark chocolate center. This recipe makes two servings so it’s great to meal prep and warm up the next day, or share with a partner or friend.
Samoa Baked Oats are vegan and can easily be made gluten-free with the use of gluten-free oats. This is a great meal prep as well, it saves well and warms up in the microwave with just 30-60 seconds.

- old fashioned oats
- banana
- almond milk
- almond butter
- toasted coconut
- dark chocolate
- dates
How to make Samoa Cookie Baked Oats
Making these Samoa Cookie Baked oats couldn’t be any easier. All you need is a blender and an oven safe baking dish. Let’s get started!
To start, preheat the oven to 350F.
In your blender, combine banana, oats, almond milk and almond butter. Blend the ingredients together on high speed until creamy and smooth.
Fold in toasted coconut and chocolate chips. Then, pour mixture into an oven safe baking dish.
I like to add chocolate chips or a piece of a chocolate bar in the center, this will create a gooey and creamy center. Place in the center of the oats and cover slightly with a thin layer or batter.
Place in the oven and baked for 30-40 minutes depending on the desired texture. 30 minutes will get you a creamy goey center, 40 minutes will have a more solid cake like texture.
Remove from oven and top with additional toasted coconut, dark chocolate and date caramel. Date caramel is just blended soaked dates. I like to make a big batch and save the rest for recipes or to snack on throughout the week.

I made this without the date caramel. It was like a cake almost…so delicious but still healthy tasting/guilt free. Definitely recommend trying it !
Oooooohhhhh, my God. This was soooooo freaking good! I made it this morning for breakfast. I hate to sound stalker-like, but Hannah is my new favorite person. Her recipes are so simple and so good. This recipe makes three servings for me, but I could’ve eaten the whole bowl and then some. ? The only thing I didn’t have was date caramel since I don’t have dates. Make this! You won’t regret it.
