Gluten free brownie mix makes this recipe incredibly easy. I used Simple Mills, but feel free to use your favorite brand or even your favorite homemade brownie recipe like my vegan banana brownies or cosmic brownies (minus the frosting).

Cream cheese is necessary for creating that creamy cheesecake filling. I have not tested this recipe with dairy free cream cheese, but my assumption would be that it would work just fine. Just make sure to add in the eggs for the binding agent.

Coconut sugar is a unrefined sweetener that I love using in my dessert recipes. You may however sub for cane sugar if desired.

Vanilla extract is necessary for any baked good. It adds a ton of flavor.

Eggs will help bind the cheesecake filling together and create a really yummy custard like texture.

Frozen cherries work best for this recipe because they are already soft and tender and make creating the cherry sauce a breeze. You can however, swap for fresh cherries if desired. Just make sure to remove the pit!

How To Make

Cherry Cheesecake Brownies are a quick and easy dessert to make! They only take about 20 minutes to prep, after they’re baked they need to chill for about 4 hours before serving.

So I do recommend making these the day before you’re ready to enjoy. But I promise, the longest and hardest part it just waiting for them to set, everything else is easy! Let’s get into it:

Start by making the cherry filling. On the stovetop add in the frozen cherries and sugar, mix well and let simmer on low for 5 minutes. Use a potato masher to press down and break down the cherries. Once sauce has thickened, set aside to cool.

Next make the brownie mix as directed on the package. Press it into an 8×8 baking dish that is lined with parchment paper and set aside.

In a stand mixer or large bowl with hand held mixer, add in the softened cream cheese, eggs, vanilla and sugar. Beat until smooth and creamy.

Evenly spread cream cheese filling over brownie batter and top with cherry mixture. Use a knife to create swirl design and then bake until edges are set and center is giggly.

Chill on counter before placing in the fridge for a minimum of 4 hours. Cut into and serve chilled or warm, enjoy!!

Leave a little overhang on the parchment paper so it’s easy to remove from the baking dish after they have been chilled.

Ingredients

Brownie Base

  • 1 box of Simple Mills Gluten Free Brownie mix, can use any brownie mix or your favorite homemade recipe

Cheesecake Filling

  • 2 (8oz) blocks of cream cheese, softened
  • 1/2 cup coconut sugar, can sub cane sugar or monk fruit sweetener
  • 2 tsp vanilla extract
  • 1 large egg

Cherry mixture

  • 12oz frozen cherries, can use fresh, pitted cherries
  • 1/4 cup coconut sugar, can sub cane sugar or monk fruit sweetener
  • 1 tsp arrowroot starch, can sub cornstarch or tapioca flour

Directions

  1. Preheat oven to 350F and line an 8x8 baking dish with parchment paper and set aside.
  2. Start by making the cherry filling. On the stovetop in a medium saucepan, add in the frozen cherries and sugar, mix well and let simmer on low for 3-5 minutes.
  3. Use a potato masher to press down and break down the cherries. Add in the arrowroot starch, mix well and allow sauce to simmer. Once it has thickened, about 3 minutes, remove from heat and side aside to cool.
  4. Next make the brownie mix as directed on the package. Press it into the prepared baking dish and set aside.
  5. In a stand mixer or large bowl with hand held mixer, add in the softened cream cheese, eggs, vanilla and sugar. Beat until smooth and creamy.
  6. Evenly spread cream cheese filling over brownie batter and top with cherry mixture. Use a knife to create swirl design and then bake for 45-50 minutes, or until the edges are set and the center is giggly.
  7. Chill on counter for 1 hour before placing in the fridge for a minimum of 4 hours or chill completely, or best overnight.
  8. Cut into squares and serve chilled or warm, enjoy!!
