How to Make
Cook pasta in boiling water until al dente. Reserve ½ cup of pasta water, then drain.

In a blender or food processor, combine sauce ingredients. Blend until ultra-smooth and creamy. In a skillet, melt butter over medium heat. Add garlic and sauté, then lower the heat, and pour in the blended cottage cheese sauce.


Add the cooked pasta and a splash of reserved pasta water. Toss until glossy and coated. Adjust consistency with more water if needed. Top with extra parmesan, black pepper, and parsley.

- 1 cup cottage cheese (I use Good Culture 2%)
- ¼ cup grated parmesan cheese
- 2 tbsp butter or olive oil
- 2 cloves garlic (minced)
- ¼ cup milk or oat milk (add more as needed to thin)
- Salt + pepper (to taste)
- ½ tsp lemon juice (optional)

Instructions
- Bring a pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup of pasta water, then drain.
- In a blender or food processor, combine cottage cheese, parmesan, milk, salt, pepper, and lemon juice. Blend until ultra-smooth and creamy, it should look like traditional Alfredo sauce.
- In a skillet, melt butter over medium heat. Add garlic and sauté 30–60 seconds until fragrant.
- Lower the heat, then pour in the blended cottage cheese sauce. Stir until warmed through do not boil (it can separate).
- Add the cooked pasta and a splash of reserved pasta water. Toss until glossy and coated. Adjust consistency with more water if needed.
- Top with extra parmesan, black pepper, and parsley.
Notes
- Add more milk as needed — different cottage cheese brands vary in thickness.
- It’s normal for the sauce to thicken as it sits; pasta water fixes everything.
- Lemon juice is optional but brightens the whole dish.
