Healthy Avocado Pudding

Extra creamy, thick and dairy-free avocado pudding
One of my very first recipes that I made for Lovely Delites back in 2018 was an avocado fudge. I made it for my parents and they have not stopped talking about it since, so I thought it was about time to bring it back.
This recipe is slightly different but equally, if not more, delicious. This avocado pudding is made with only six simple ingredients and comes together in minutes. My secret to making this pudding extra creamy and thick is using Almond Breeze Extra Creamy Almondmilk which I feel similar texture and consistency as whole dairy milk but has fewer calories and sugar per serving.
I can’t wait for you to try this recipe! Don’t forget to tag me over on Instagram or Tiktok so I can see your creations!

Ingredients needed to make healthy avocado pudding
This avocado pudding could not be any easier to make. You will only need a handful of ingredients and a food processor or blender.
ripe avocados – using ripe avocados will ensure this recipe is on the sweeter side rather than tart. As long as they are soft to the touch, you’re good to go!
maple syrup – I love using maple syrup in my recipes because it’s an all-natural sweetener, and it tastes amazing blended into this recipe.
cacao powder – organic cacao powder gives this recipe that rich chocolate flavor.
Almond Breeze Extra Creamy Almondmilk– Using the Extra Creamy Almondmilk from Almond Breeze is my secret to making this pudding EXTRA CREAMY. Almond Breeze has a creamy smooth texture and hint-of-almond taste.
vanilla extract – just a touch of vanilla extract adds a rich flavor to this recipe. It’s not 100% necessary, but I encourage it.
sea salt – a pinch of sea salt helps balance out the flavors of the richness in this pudding recipe.

How to make extra creamy chocolate pudding
You will need a blender or food processor to make this recipe. This helps blend the ingredients together and gives you that lovely pudding texture.
To start, add the ripe avocados, skins removed, to a blender along with the maple syrup, cacao powder, Almond Breeze Extra Creamy Almondmilk, vanilla extract and sea salt.
Blend on highspeed for about 1 minute or until the ingredients are well incorporated. Now, you can stop here and eat it right out of the blender, but I recommend storing it in the fridge for at least an hour to chill. Trust me, it’s worth the wait, but feel free to lick the spoon!
When it’s ready, remove from the fridge and top with your favorite non-dairy whipped cream and sprinkle with some cacao nibs and enjoy!!

Absolutely loved this recipe! Thanks so much for sharing 🫶🏼

I really enjoyed this recipe! I made it for my dad, who abides by a strict diet, and he really loved it! Rather than use maple syrup, I used agave syrup, which worked really well.
