Vegan Snickers Bars

This recipe for my 3-ingredient Snickers Bars takes me back to my little apartment kitchen in 2020, where it first came to life. I was experimenting with simple, better-for-you desserts and somehow landed on this version that quickly became one of my community’s all-time favorites.
Alongside my Twix Bars and Cosmic Brownies, these have earned their spot as a fan favorite for good reason. The base uses my signature date caramel, but you can easily swap in coconut caramel if you’re craving something extra gooey. Vegan, gluten-free, and unbelievably delicious, this recipe proves that the simplest treats are often the best.

How to make
Soak dates in almost boiling water, add them to a food processor and blend till smooth.

Remove date caramel from food processor and add in the almond flour, peanut butter and small amount of date caramel. Blend once more to create the nougat layer.

Press the nougat dough into the prepared loaf pan and then spread on the remainder of the date caramel. Top with roasted peanuts and freeze for 1-2 hours.

When ready, cut into bars and dip in melted chocolate. Freeze till firm and enjoy!

How to store vegan snickers bars
These Homemade Snickers Bars bars are best stored in an airtight container in the fridge or freezer! If storing in the fridge, enjoy within 7-10 days. If storing in the freezer, enjoy within 30-60 days. Let the snickers bar thaw on the counter for 5 minutes before enjoying.
Taste and Texture
These Vegan Snickers Bars taste just like the classic candy bar but with a wholesome twist. The nougat layer is soft and chewy with just the right sweetness, the date caramel is rich and gooey with notes of vanilla that mimic traditional caramel, and the whole thing is coated in a thick layer of smooth, velvety dark chocolate. Every bite is the perfect balance of sweet, salty, and indulgent—without any of the fuss of store-bought candy.

Vegan Snickers Bars
Ingredients
Date Caramel
- 1 cup medjool dates (soaked in hot water)
- 3 tbsp peanut butter
- 1 tsp vanilla extract
Nougat Layer
- 1.5 cups almond flour
- 1.5 tbsp date caramel
- 4 Tbsp peanut butter
Peanuts
- 1/2 cup roasted peanuts
Dark Chocolate
- 1.5 cups dark chocolate chips
- 2-3 tsp coconut oil
Instructions
- To start, remove the pit from the dates and then soak them in hot water for 10 minutes, not quite boiling, but almost there. The key is to have a super soft date that can easily be blended. While the dates are soaking, prepare a loaf pan by lining it with parchment paper.
- After the 10 minutes are up, drain the water from the dates and add the soaked dates to your food processor along with the peanut butter and vanilla extract. Blend for about 3-5 minutes, stopping and scraping down the sides a few times during the process. You will start to see a paste, caramel like texture start to form.
- Remove the date caramel from the food processor and set aside. Next, add in the almond flour, 1.5 tbsp of the date caramel and peanut butter. Blend once again for a few minutes or until you get a crumbly crust like dough. You should be able to pick it up and press firmly and it should hold it’s shape. If it does not, keep blending.
- Add the crust to the prepared loaf pan and firmly press down with a spatula until it molds to the loaf pan and there are no gaps on the edges.
- Next, pour the date caramel over the crust and spread until it is evenly dispersed. Top with roasted peanuts and slightly but firmly press them into the date caramel. Peanuts should cover the date caramel with little to no gaps.
- Place the loaf pan in the freezer and allow to harden for about 60-90 minutes. You may also leave it overnight.
- Next, melt the chocolate in the microwave or over a double broiler with a small amount of coconut oil. This is to ensure the chocolate is creamy and smooth. If using the microwave method, melt in 30 second increments until chocolate is almost melted. Stop and mix a few times in between.
- Remove the loaf pan from the freezer and remove the naked snickers bars by pulling on the parchment paper. Place on a cutting board and cut the block into equal sized snickers bars.
- Moving quickly, dip and coat each snickers bar with the chocolate and place back on the cutting board that is lined with the parchment paper so the chocolate does not stick once hardened.
- Place the snickers bars back in the freezer for about 10-15 minutes to harden completely and enjoy!!
Notes
- Soften the dates in hot water for 10 minutes before blending to get that rich, caramel-like texture.
- Check the crust: It should be firm enough to press together in your hands without crumbling. If it feels dry, mix in a little more peanut butter or date caramel.
- Melt chocolate gently: Microwave with 1–2 teaspoons of coconut oil in 30-second bursts, stirring well between each round until smooth and glossy.

Great recipe!! I loved making it and loved eating them (my boyfriend kept stealing them)!
I love that!! thanks for your comment 🙂
Do you use an all natural (only peanut) peanut butter or a kraft or Jiff type of prepared peanut butter?
I use all natural! Only ingredient being peanuts.
Where do I get date caramel?
you make it by blending the dates. the instructions are listed on the recipe card and blog post!
Where can I get the nutrition info for these and your other recipes eg protein, kjs
hey logan! I don’t list calories or nutrition for personal reasons, I instead focus on the wholesome ingredients that I put into my recipes. However, you can always find out by plugging the ingredients into a calculator on google!
I used a blender which I was afraid it wouldn’t get the texture need, but it did pretty good for the Carmel dates! I substituted almond flour or coconut because I thought I had some but didn’t, which made it more cumblely then I think it should be, but regardless it was delicious 🙂 great recipe ill make it again!
hi lauren! i’m so glad you enjoyed them! unfortunately, coconut flour isn’t a 1:1 replacement for almond which is why they turned out a bit crumbly. but all in all i’m glad you tried them and thanks so much for sharing your review!!
Thank you for this recipe. They are AMAZING!!!
I’m so happy to hear that you enjoyed them!! Thank you for your comment!
Just made these this weekend … wow there delicious !!! Next best thing to a snickers !!!
Mine aren’t as pretty as yours but I’m def making again !!!
Hi chrissy! Aw that’s awesome, I’m so glad you enjoyed them! Thanks for your comment!
Looove this recipe!! Snickers don’t taste like they used to anymore and when I found this recipe I was so excited to try it! And it did not disappoint, I will forever be making my own now!!:)
Hi Irina! Thank you so much for your comment, i’m so glad you enjoyed the recipe!
These were fantastic ! I really was skeptical w/ the dates but it was great . Can’t wait to make another batch !
Thanks for your comment Chrissy, i’m so glad you enjoyed them!!
This look AMAZING and can’t wait to try them!
Question: can we substitute the dates for something else that has less sugar?
Hi Laura! I can’t wait for you to try them. You can substitute them for anything that you’d think would mimic a caramel flavor. Dates have sugar, yes but it’s all natural which is why I went with it rather than making a caramel with regular sugar. I also have a coconut based caramel recipe but it still has sugar.
Coconut Caramel
1/2 cup coconut sugar
13.5oz of coconut cream, solid parts only
3 tbsp maple syrup
Pinch of salt
To make the coconut caramel, add all the ingredients to a sauce pan and heat over medium to low stirring occasionally for about 5 to 7 minutes. Keep stirring & the sauce will thicken up. let it cool and enjoy. If the sauce is too runny and hasn’t thickened, then you haven’t heated it long enough so just add it back to the pot and keep stirring it until it thickens!
I made these this past weekend and they are pretty good! Like the other reviewer said, not exactly like snickers, but I’d definitely choose these over a snicker bar. SO good. Also, I have no room in my freezer and had hoped leaving in the fridge near the ice maker would make them hard enough, but alas it did not. I had trouble with them staying together to dip in chocolate. So I took some things out of the freezer and put in the fridge for about 30 mins to help harden them and it worked.
I’m so happy you enjoyed them!
I tried these, and they were delicious, not quite like Snickers, but I (we lol) really enjoyed them. Will definitely make again. Thanks for sharing.
so glad you gave them a go!
I’ve just recently made them and they’re amazing and they don’t make my teeth hurt like original snickers do
that’s a win in my book! so glad you enjoyed them 🙂
I just made them- you have changed my life ….. home made is always better, and plant based is the best ever
Hi!! This makes me SO happy. I’m so glad you loved them too. Thanks for the comment and rating 🙂
These are so good and easy to make!! Thank you thank you!
i’m so happy to hear!!! 🙂
These are SO delicious! I rarely think dupes taste like the real thing, but wow!! I can’t wait to try all your other recipes! Thanks for blessing my day with this sweet treat ☺️
Hi Claire! YAYYY, makes me so happy to hear you enjoyed them 🙂 can’t wait to see what you make next!! I appreciate the comment and rating.
Would you be able to use figs or raisins and a substitute for the dates?
I think either of those would work as long as they are dried! texture will be different though and a bit thicker than what is shown here.
What 1.5 cups mean.?
1 and 1/2
Very good tastuin. But layer one crumbled on me and I glued with chocolate. Didn’t look pretty afterwards. I need to make it more sticky or liquid so it will freeze solid and not crumble when I cut it
Hi Birgit! when making the nougat layer, you should be able to pick it up and mend it together with your hands. if it’s too crumbly, add in more date caramel or peanut butter.
This was a great recipe!! Not a ton of ingredients and was able to try it with oat flour. I really enjoyed this!!
YAYY! So happy you loved it!
These are delicious but how do u store them fridge or freezer and roughly would they still be ok 3/4 days 😊?
Hi Kathy! Yay, i’m so glad you liked them!! Sorry, for the late reply, for future reference I have storage options on the blog post. These Healthy Snickers Bars bars are best stored in an airtight container in the fridge or freezer! If storing in the fridge, enjoy within 7-10 days. If storing in the freezer, enjoy within 30-60 days. Let the snickers bar thaw on the counter for 5 minutes before enjoying.
Made this and it was nothing short of amazing. Tasted just like a snickers bar. It was a hit and Everyone loved it even the kids. There wasn’t even a crumb left. Have made the dates caramel from this same recipe and have it stored in the fridge in a mason jar to enjoy with countless things. Thank you for sharing this recipe.
Hi Evelyn! Aw yay that is amazinggg, i’m so glad you are enjoyed it!
Made these for my sis birthday and they were such a hit! People couldn’t believe they were plant-based and healthy! The caramel filling was sooo delicious! Can’t wait to make them again!
aw yay, that makes me so happy!!! xx
lovely ! im making these 🤍
how much grama would be one cup of dates ? on the internet there are really different answerws for that from 155g even to 240g or anything in betweeen but mostly 220-240
would really appreciate your help and advice !
hi caro! I think the grams depends on the size, we don’t use that measuring system here in the states so i’m not sure i’d be much help! Think of a large handful size!
Can you use another flour, such as oat flour maybe?
Oat flour will work as well! Texture will be slightly different 🙂
I’m so excited to try these..The banana ones too! I live with many autoimmune diseases. Celiac disease -Gluten-free is an absolute must for me. I also have type 1 Diabetes. That means I need low carb. Do you by chance know how may carbs per serving?
hi cassie! i unfortunately do not count macros. however you can plug the ingredients into a calculator on google to determine the carb count based on the serving size. i hope this helps! xx
The recipe sounds delicious, and I can’t wait to try it. What size loaf pan is recommended.
Hi Carolyn! I hope you love them as much as i do! I used a standard loaf pan, 8-1/2 x 4-1/2 x 2-1/2 inches 🙂
These are delicious, I’m slightly addicted 😊
So happy to hear it!!
Yumm! This was good. I actually replaced peanut butter with tahini and it turned out super delicious! 😋
Love that substitution!!
Yummy <3 I in place of the almond flour I used the almonds and walnuts in my nut-milk bag after draining the milk as I don't like wasting it. Turned out great 🙂
love that no waste substitution!
They are absolutely delicious! It’s a nice snack and it doesn’t taste worse than real snickers.
I’m so glad you enjoyed!! xx
I don’t know if I made a mistake but I couldn’t make the nougat layer work. The ratio of dry to wet ingredients seemed to be off.
Is it possible that the amount of almond flour is too much? Or do you maybe use almond flour that’s more oily in the US?
Hi Luisa, I have not heard about the nougat layer not working out of all the reviews. My guess is maybe the almond flour was overpacked. Also, it is possible the almond flour here in the US is a bit finer. However, not to worry- you can simple add in more date spread or peanut butter until the nougat layer is firm and stops crumbling.
So good 😋
YAY!
This sounds wonderful. Do you use salted or unsalted peanuts?
Either would work, the salted would be best though for that sweet and salty balance 🙂 just make sure they are roasted!
I like the question, how long will these last?
About 10 mins I’d say! 😋
hahaha this made my day!
These Healthy Snickers Bars are an absolute game-changer! 😍🍫 Not only are they gluten-free and vegan, but they also taste like a dream. The combination of luscious caramel, crunchy peanuts, and rich chocolate will satisfy your sweet tooth while keeping your health goals in check. A guilt-free indulgence that’s too good to resist! 💚🌱
amazing review! I’m so happy you’re loving them 🙂
They taste just like a snickers! Easy to make!
They came out great but they probably would taste even better if they had something crispy inside the nougat part
ohhh like puffed quinoa! yum 🙂
Absolutely love them! Thank you, added some sea salt on top because I really like that sweet and salty combo!
So happy you enjoyed!!
Delicious and super easy to make!
glad you liked them!
I made these for the first time and they are now my go to homemade chocolate bar. Thank you so much for the recipe!!
that makes me so happy to hear! xx
SOOOO YUMM 🤩
Fantastic recipe. The whole family loves them!
this makes me so happy!
Made these today! Fun to make but they are super rich from the dates. I was kinda done after one bite. Still yummy though especially with sea salt on top.
I made these yesterday and my kids absolutely loved them! so did I!
amazing!!
Honestly, I never leave reviews unless something is amazing and these were AMAZING! I used a bit of the wax paper to hold the bar in my hand while eating because the chocolate melts fast in your hands. 10 stars and I will be making them again (also, my picky 7 year old devours them.) Thanks for the recipe! <3
this is amazing! so glad you enjoyed them 🙂
Absolutely amazing! Making it for the third time now and everyone loves it. Thank you for sharing it with us.
