Use store-bought pie crust to make these quickly and easily. Otherwise, you can use your own homemade pie crust recipe is you prefer!

I like to use red apples such as Pink Lady or Honeycrisp for this recipe as they tend to be sweeter in my opinion, but any apple will work.

Coconut sugar is my favorite sweetener to use in my recipes, but brown sugar or cane sugar works great too.

Add in lots of cinnamon to really bring out that fall flavor.

A touch of vanilla extract adds a ton of flavor.

Sprinkle turbinado sugar on top before baking to really make these little pies stand out.

How To Make

ONE: Peel, and dice apples into small bite sized pieces. Add them to a bowl with the coconut sugar and cinnamon. Mix well and set aside.

TWO: Next, roll out pie dough on a floured surface and use a circle cookie cutter, or the top of a glass to cut out circles. Add circles to muffin tins and mend to the edges.

THREE: Add about a tablespoon of the apple mixture to each pie crust and then with the remainder pie crust add on the topping overlapping every other one.

FOUR: Lightly coat with non-stick spray and sprinkle with turbinado sugar before baking. Let cool, remove and enjoy!

Tips And Tricks

Use pre-made store bought pie dough for a quick and easy recipe.

If you have a homemade pie crust, feel free to use that!

Make the apples first so they have time to marinate before adding into the pie cavities.

The top crust isn’t mandatory, but i strongly encourage it because they turn out much cuter.

How To Serve And Store

Serve these mini apple pies warm with some whipped cream or vanilla ice cream.

Store in an airtight container in the fridge and enjoy up to 5 days. Apple pies can also be frozen and enjoyed up to 60 days.

These mini apple pies taste just like a standard slice of apple pie but in mini, bite size pieces. The crust is buttery, flakey while the inside is sweet and warm.

Ingredients

  • 1 roll of refrigerated pie crust
  • 2 red apples, peeled and diced
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 tbsp ground cinnamon

Directions

  1. Preheat oven to 400F.
  2. Peel, and dice apples into small bite sized pieces. Add them to a bowl with the coconut sugar and cinnamon. Mix well and set aside.
  3. Next, roll out pie dough on a floured surface and use a circle cookie cutter, or the top of a glass to cut out circles.
  4. Add the circles to the muffin tins and mend to the edges.
  5. Next, add about a tablespoon of the apple mixture to each pie crust.
  6. Use a pizza cutter to cut out strips with the remainder of the pie dough and add these on top of each apple pie overlapping every other one.
  7. Lightly coat the tops of each pie with non-stick spray and sprinkle with turbinado sugar.
  8. Bake for 18-20 minutes, let cool in the muffin tin for 10 minutes before removing and enjoy!
