Birthday Cake Oat Bars Vegan

Back when I was working full time, the last thing I wanted to do was wake up extra early to make breakfast, especially on the busy weeks! Having my breakfast prepped and ready to go in the morning not only saved me so much time, but it also ensured that I’d be having a healthy breakfast rather than grabbing something that wasn’t the healthiest.
These oat bars are made with wholesome ingredients like organic oats, banana, and almond butter. They have absolutely no added sugar, but instead rely on the over-ripe bananas for sweetness. I can’t wait for you to try this recipe, I know it will be loved by the whole family!

Ingredients in birthday cake oat bars
When designing this recipe, I wanted to create something that would be the perfect grab and go breakfast. With that being said, I didn’t add in any sugar or sweetener. Instead, these oat bars reply on the overly ripe bananas for the sweetness and honestly, they do a pretty dang good job!
- mashed over-ripe banana
- almond butter
- vanilla extract
- almond extract
- oats
- oat flour
- baking powder
- salt
- birthday sprinkles for topping
How to make healthy oat bars
Birthday Cake Oatmeal Bars are quick and efficient to make. This recipe is made in one bowl and comes together in as little as 25 minutes!
To start, preheat the oven to 350F and prepare an 8×8 baking dish by lining it with parchment paper. Baking tip, lightly coat the bottom of your pan with non-stick spray before putting your parchment paper in to stop it from moving around.
Then, in a large mixing bowl add in your bananas and using a fork or potato masher, mash until there are little to no chunks left. Add in the almond butter, vanilla and almond extract and mix until ingredients are well combined.
Next, add in the oats, oat flour, salt and baking powder and mix once more. Fold in some sprinkles last.
Add the batter to the prepared baking dish, and top with additional sprinkles. Bake in the preheated oven for 18 minutes. Remove from the oven and let cool completely before cutting into.
These oat bars are best stored in the refrigerator in an air tight container. Enjoy up to 5 days!

These are so delicious! I love anything that has a cake-y flavor and almond extract and this recipe is packed with nutrients. A fun switch up from usual banana bread. Tip: definitely use a very ripe banana – the first time I made these, I used a lightly ripe banana and the flavor is definitely sweeter with a super ripe one!
