brie puff pastry bites- Made 4 ways

These Bire Puff Pastry Bites are the ultimate easy holiday appetizer — buttery puff pastry, melted brie, and four different toppings so there’s something for everyone. Whether you’re hosting Thanksgiving or need a quick dish to bring to a holiday party, these bite-sized puff pastry appetizers look fancy, taste incredible, and come together in under 20 minutes.

I love working with puff pastry because the possibilities are endless — I’ve wrapped it around apples, flipped it upside-down with pears, turned it into pizza, and even made a classic cheese danish with it. So these brie bites, made four different ways, are right up my alley.

They’re the perfect prep-ahead appetizer: assemble them the night before and pop them in the oven 20 minutes before guests arrive. One tray, four flavors, zero stress. Less work for you, more variety for everyone else… and they disappear every single time.

They also play so well with other apps — like my Fig Crostini — and they keep the mess (and the hosting stress) to a minimum

How To Make

Press pastry squares into a greased mini muffin tin, add a cube of brie to each, and top with your favorite flavor combo. (check out the recipe card down below for more details)

Bake until golden and bubbling. Let cool slightly before serving (the cheese firms up as it sits).

Tips and Tricks

  • Keep the puff pastry cold: If it gets too warm while you’re prepping, pop the cut squares back into the fridge for 10 minutes so they puff up beautifully in the oven.
  • Don’t overload the toppings: A tiny dollop goes a long way — too much jam or sauce can spill over and prevent the pastry from rising.
  • Trim your brie rind only if you want to: The rind is edible and melts into the cheese, but if you prefer a super gooey bite, you can trim the edges off.
  • Spray or brush the pan well: Puff pastry can stick once the cheese melts, so a nonstick spray or brush of oil makes the bites pop out cleanly.
  • Serve slightly cooled: They’re actually best after 5–10 minutes when the cheese sets a bit and the flavors come through.

How to Save and Store

After baking, store leftovers in an airtight container in the fridge for 2–3 days. To reheat, place them back in the oven or air fryer at 350°F for 5–7 minutes until the pastry crisps back up (microwaving makes them soft, so avoid if you can!).
