The base of this salad is made with bright and crisp romaine lettuce. You can absolutely swap it out or even just add in spinach, arugula, or any of your favorite greens instead.

Juicy chicken breast is added on top for the protein source, but if you wanted you can totally swap for beef, shrimp or fish.

Turkey bacon is made in the air fryer until perfectly crispy, feel free to substitute for regular bacon if desired.

Ripe, red juicy strawberries add a ton of depth and flavor to this salad. I’m sure blueberries, raspberries or blackberries would taste good too.

Red onion adds a nice bite to this salad and the perfect amount of crunch.

Cherry or grape tomatoes taste delicious in this salad, you can use any tomato that you’d like. I bet an heirloom tomato would taste amazing in here.

Avocado is a must in my opinion, but you can leave it out if desired.

ONE: If not using pre-made chicken breast then start by making them on the stovetop, on the grill or in the oven. Set aside to rest while you prep the rest of the ingredients.

Yes absolutely! My only recommendation would be to look for one that isn’t loaded with salt though.

Would I be able to make this ahead of time?

Yes! If making ahead of time, store dressing and chicken separate from salad. This is to prevent a soggy salad. When it comes time to eat, warm the chicken breasts and toss the salad with the honey mustard dressing.

What other greens could I use instead of romaine?

Anything would work! Arugula, mixed greens, spinach, kale, etc!

Ingredients

Chicken Breasts

  • 2 chicken breasts
  • 1 tbsp coconut oil, or any other oil.
  • salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/2 tbsp butter, cut into 1 tsp cubes

Honey Mustard Dressing

  • 1/4 cup sour cream, plant-based or regular (can also do plain yogurt or mayo)
  • 1/4 cup honey
  • 1 tsp red wine vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp yellow mustard
  • 2 tbsp mustard dijon
  • 1/2 tsp white miso paste (optional but encouraged)

Salad Ingredients

  • 1 head of Romaine Lettuce, chopped
  • 5 slices of cooked turkey bacon, chopped
  • 1 cup of 1/2 red onion, sliced thin
  • 1 cup cherry tomatoes, halved
  • 1 cup strawberries, sliced
  • 1 Avocado, sliced

Directions

  1. Start by making the chicken breasts. Heat 1 tbsp coconut oil over medium to high heat.
  2. Pat chicken breasts dry with a paper towel and then season both sides with freshly cracked salt and pepper. In a small bowl, mix garlic powder, onion powder, Italian seasoning and paprika together and then divide evenly and season both sides of the chicken breasts.
  3. Add breasts to skillet and allow to cook for 5-7 minutes, set a timer. Flip, add in the cubed butter and cook for the same amount of time, or until the internal temperature reaches 165F. Remove chicken from the skillet and allow to rest before slicing.
  4. Next, make the honey mustard dressing by whisking all ingredients together in a bowl.
  5. Then, assemble salad. Add romaine lettuce to a large salad bowl, followed by cherry tomatoes, red onion, turkey bacon, strawberries, avocado, and sliced chicken breasts. Drizzle with honey mustard, toss and enjoy!
