a bowl that is filled with lemon orzo, asparagus and chicken meatballs

You know I love a Dinner in a Pinch moment—and this one might be my new favorite. These lemon herb chicken meatballs are juicy, flavorful, and come together in one skillet with orzo, asparagus, and all the bright, springy goodness. It’s giving cozy comfort and fresh farmers market energy, all in under 30 minutes. If you’ve made my Teriyaki Turkey meatballs or my one pan chicken piccata from earlier this year, this recipe feels like their springtime cousin—light but still super satisfying.

What I love most is how the orzo cooks right in the same pan as the meatballs, soaking up all that lemony, herby flavor. Less mess, more flavor—yes please. This is one of those dinners that feels a little elevated, but is secretly so simple, which is exactly what Dinner in a Pinch is all about. It’s quick, it’s delicious, and it makes you feel like you’ve totally got your life together… even if you’re just winging it on a weeknight.

Ingredients needed to make

Chicken Meatballs:

  • Ground chicken: The base of our meatballs—lean, tender, and so flavorful. Feel free to use ground turkey or beef if you’d like!
  • Panko breadcrumbs & grated parmesan: These help bind the meatballs and add that perfect light, cheesy texture.
  • Egg: Keeps everything together and adds moisture.
  • Garlic, lemon zest, parsley & oregano: The flavor crew—fresh, herby, and bright.
  • Salt & pepper: Always.
  • Olive oil: For searing the meatballs until golden and delicious.

Orzo & Veggies:

  • Orzo: A tiny pasta that cooks quickly and soaks up all the good flavors.
  • Chicken broth: Adds depth and richness as the orzo simmers.
  • Asparagus & peas: Spring veggies that bring a pop of color and freshness.
  • Lemon juice, salt & pepper: Brightens everything and ties the flavors together.
  • Olive oil: For sautéing the veggies and getting things going in the skillet.

Lemon Butter Sauce:

  • Butter & lemon juice: A simple, zesty finish that takes the whole dish over the top.

How to make

Start by mixing up your meatball mixture—ground chicken, panko, parm, herbs, garlic, and all that lemony goodness—then roll into 1-inch balls (you’ll get about 12–14).

Sear the meatballs in a little olive oil until golden and cooked through, then set them aside while you work on the orzo.

In the same skillet (because we love a one-pan moment), sauté the asparagus for a couple of minutes, then add in the orzo and chicken broth. Let it simmer until the orzo is tender and most of the liquid is absorbed—stirring occasionally so nothing sticks.

Toss in the peas, a squeeze of lemon, a pinch of salt and pepper, then nestle those meatballs right back into the pan.

Finish it all off with a quick lemon butter drizzle (trust me, it’s worth it) and top with fresh dill, lemon zest, and extra parmesan if you’re feeling fancy.

Tips and Tricks for easy stovetop meatballs

  • Use a cookie scoop to portion out your meatballs evenly—it makes the process faster and helps them cook evenly.
  • Don’t overcrowd the pan when searing the meatballs—give them space so they get that nice golden crust.
  • Stir the orzo occasionally while it simmers to keep it from sticking to the bottom of the skillet (and to make sure it cooks evenly).
  • Taste and adjust at the end! A little extra squeeze of lemon or pinch of salt can make all the difference depending on your broth.
  • Make it your own: Swap in zucchini, spinach, or whatever veggie you have on hand, and feel free to use ground turkey if that’s what you’ve got.

How to serve and store

  • Serve this straight from the skillet with extra lemon zest, fresh herbs, and a little grated parmesan on top if you’re feelin’ fancy. It’s cozy enough for a weeknight but pretty enough to serve to friends.
  • Leftovers are even better the next day—the orzo soaks up all the flavor.
  • Store any extras in an airtight container in the fridge for up to 3 days.
  • Reheat in the microwave or on the stovetop with a splash of broth or water to loosen things up.
  • Not freezer-friendly as a full dish, but you can freeze the meatballs on their own if you want to prep ahead!

  • In a large bowl, mix together ground chicken, panko, parmesan, egg, garlic, parsley, lemon zest, oregano, salt, and pepper.
  • Form into 1-inch meatballs (about 12-14 meatballs). Use a cookie scoop to make them uniform.

  • Add the meatballs and cook for 8-10 minutes, turning occasionally, until golden brown and cooked through (internal temp: 165°F). Remove from skillet and set aside.
  • In the same skillet, heat 1 tbsp olive oil and sauté the asparagus for 2-3 minutes.
  • Add the orzo and chicken broth, bringing it to a simmer.
  • Cook for 8-10 minutes, stirring occasionally, until orzo is tender and has absorbed most of the liquid.
  • Stir in the peas, lemon juice, salt, and pepper, cooking for 1 more minute.
  • Nestle the meatballs into the orzo.
  • In a small bowl, whisk together the melted butter, lemon juice, and dill for the lemon butter sauce.
  • Drizzle the sauce over everything for an extra burst of flavor.

Notes

  • Ground turkey works too if you don’t have ground chicken—just make sure it’s not too lean so the meatballs stay juicy.
  • Don’t skip the lemon butter sauce! It’s super simple but adds a ton of flavor and really ties the whole dish together.
  • If your orzo starts to stick or dry out, just add a splash of extra broth or water to loosen it up while cooking or reheating.

This was DELICIOUS!! My husband said he didn’t have high hopes because he doesn’t like meatballs (lol) but he absolutely loved these! He gave it a 10/10 and said he would order it at a restaurant. I followed the recipe exactly! Super lemony and yummy. Perfect spring dinner 🙂

Omg this made my day!! 😂 Tell your husband I’m honored to have converted a meatball skeptic — 10/10 from him is the highest praise! So glad you both loved it, and yesss the lemon makes it feel so light and springy. Thanks so much for trying it and taking the time to share!! 💛

absolute fire. followed recipe exactly. I never make anything in 30 minutes – it took me about an hour but I bet I’ll get quicker on future meals (bc I will be making this again and again)

Ahh this made my day!! 🥹 So glad you loved it, and honestly, first time always takes longer. You’ll be flying through it next time! Thanks so much for trying it and taking the time to share 🫶

I did a literal happy dance the first time I made this. It’s been in our weekly rotation in our house the past 3 months. Its so quick and easy to make but doesn’t taste like it.

I haven’t made this yet but I’m super excited too based off of everyone’s reviews! I will be making these for a party and wondering how many meatballs does this recipe typically make if I follow the instructions for one serving – I’m wondering if I’ll need to scale up or not. Thank you!!

Just wondering what the macros are. If they are on the page, I couldn’t see them.
Thank you 😊
