There’s nothing better than a one-pot dinner on a busy weeknight, especially when you want something hearty, flavorful, and quick. This One Pot Taco Pasta has become a new favorite in our house because it delivers all the comfort of cheesy tacos in a skillet pasta format—without a sink full of dishes.
It’s the kind of meal you can throw together in 30 minutes and still feel good about serving to the whole family, whether it’s dinner tonight or meal prep for the week ahead. It even became my fiancé’s favorite comfort meal—and the funny part is, he doesn’t even like cottage cheese.
You know I love sneaking cottage cheese into recipes—it blends into the sauce so smoothly that it feels rich and creamy, without heavy cream, and adds a boost of protein at the same time. This taco pasta is another one of those easy, cozy dinners that feels a little indulgent but is simple enough for weeknights.

How to make taco pasta
Cook the protein: Heat a large pot or deep skillet over medium heat and add a drizzle of oil. Brown the ground turkey with taco seasoning, breaking it up with a spatula, until fully cooked.

Build the base: Stir in the black beans, diced tomatoes, bell pepper, corn, pasta, and broth. Bring the mixture to a boil, then reduce the heat to medium-low.


Make it creamy: I used an immersion blended to blend and entire container of cottage cheese. You can also use a blender or food processor for this.


Serve: Spoon into bowls and finish with your favorite toppings.
Tips & Tricks for the Best Taco Pasta
- Blend the cottage cheese first: For the creamiest sauce, blend cottage cheese until smooth before stirring it into the pasta. It mimics heavy cream but lightens up the dish.
- Adjust spice to taste: If you like extra heat, add diced jalapeños or a pinch of cayenne with the taco seasoning. For a milder version, use mild taco seasoning or skip the peppers on top.
- Make it ahead: This pasta makes amazing leftovers—the flavors get even better the next day. Store in an airtight container in the fridge for up to 4 days.

- 1 16oz container cottage cheese (blended until smooth)
- 2 cups dry chickpea pasta shells (or whole wheat pasta)
- 2 cups chicken broth (or beef/veggie broth)
- 1 14oz can (fire-roasted diced tomatoes)
- 1 packet taco seasoning (I used Siete Mild )
- 1 small red bell pepper (diced)
- 1 cup frozen corn
- 1/2 cup shredded cheddar or Mexican blend cheese
- Olive oil or avocado oil (for cooking)
- Salt + pepper (to taste)

- sliced jalapeños, avocado, cilantro, Greek yogurt or sour cream
Instructions
- Heat a large pot or deep skillet over medium heat. Add a drizzle of oil, then brown the ground turkey. Once cooked, add in taco seasoning and mix until fully combined.
- Next, stir in rinsed black beans, diced tomatoes, bell pepper, corn, pasta, and broth. Bring mixture to a boil, then reduce heat to medium-low.
- Cover and cook for 12–15 minutes, stirring occasionally, until pasta is tender and most liquid has absorbed.
- Blend cottage cheese using an immersion blender, blender or food processor. Then, stir it into the mixture. This makes it rich and creamy without heavy cream).
- Add shredded cheese, and season with salt + pepper to taste.
- Spoon into bowls and top with avocado, jalapeños, cilantro, or a dollop of Greek yogurt for even more protein.
Notes
- Blending tip: If you don’t have a blender, use a food processor or immersion blender for the cottage cheese—it just needs to be smooth and creamy.
- Pasta swap: Any short pasta shape works here—penne, rotini, or shells all hold the sauce well.
- Make it vegetarian: Skip the ground turkey and add extra beans or even lentils for a hearty, meat-free version.
