This Baked Ziti has been on repeat while I prep all the things before baby arrives. I wanted something cheesy and comforting, but still easy to pull out on a busy night. The sauce is a blend of cottage cheese and veggies (yes, blended—so no one will ever know). Once it’s hot and bubbly, it turns into the coziest, creamiest pasta bake. How to Make This Creamy Cottage Cheese Baked Ziti

Cook the pasta: Bring a large pot of salted water to a boil. Cook the ziti until just al dente — about 1–2 minutes less than the package instructions. Drain and toss with a little olive oil to keep it from sticking.

Blend the sauce: In a blender, combine the marinara sauce, cottage cheese, spinach, and zucchini. Blend until smooth and creamy, then season with Italian seasoning, salt, and pepper to taste.

What to Know Before You Make It

  • Let the pasta stay slightly undercooked: Cooking it just to al dente (or even a minute under) keeps it from getting mushy once baked.
  • Blend the sauce until super smooth: This helps hide the veggies completely and makes the texture creamy and velvety. No one will guess there’s zucchini in there!
  • Don’t skip the oil after draining the pasta: It prevents sticking and clumping while you prep everything else.
  • Freeze it tightly: Wrap the dish in foil and then a layer of plastic wrap or a freezer bag if possible. This helps prevent freezer burn and keeps it tasting fresh.

A Few Fun Ways to Switch It Up

How to Serve and Store Cottage Cheese Baked Ziti

Store: Leftovers can be stored in an airtight container in the fridge for up to 4 days. To reheat, just pop a slice in the microwave or warm it in the oven at 350°F until heated through.

  • 16 ounces ziti or penne pasta
  • 1 28 oz jar marinara sauce
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1 cup fresh spinach (packed)
  • 1 small zucchini (roughly chopped)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper (to taste)
  • 1 tablespoon olive oil
  • 1 pound ground turkey (cooked and seasoned )

Instructions

Unfortunately, this recipe did not work for us. I followed the freezer directions and reheated when I returned from the hospital. It required significantly longer cook time than noted and in the end was not very good tasting.

Hi Priti! Oh no I am so sorry to hear that it didn’t turn out. I know that must have been extremely frustrating especially coming home from the hospital with high expectations. so i’m very sorry. Can I ask if you baked from freezing directly or if you thawed in the fridge overnight and baked? I’ve tested both of these methods but maybe can help counteract what went wrong.
