Saucy 15 Minute Beef Udon Noodles with Veggies
If you’re looking for a quick, cozy-but-fresh weeknight dinner, this Saucy 15-Minute Beef Udon with Veggies is one of those recipes you’ll come back to again and again. It’s fast, family-friendly, super customizable, and the glossy savory sauce makes it feel a little extra special while still being totally doable on a busy night.

This one has officially become a weeknight favorite in our house, especially on those busy days when I want something comforting but still packed with color and texture. The thinly sliced beef cooks in minutes, the store-bought udon makes prep effortless, and the combo of soy, hoisin, oyster sauce, and a little chili crisp gives you that takeout-style flavor without leaving your kitchen. It’s the same reason you all love my beef ramen noodles, kelp noodle stir fry, and miso butter pasta — quick, big flavor, and zero stress at dinnertime.
If you’re making this udon for dinner and want to turn it into a full little spread, I love adding one or two easy sides to round things out. Try serving it with my garlic green beans or a quick, refreshing cucumber salad for something light and fresh alongside the noodles. And if you’re feeding a hungrier crowd (or just want to make it feel extra fun and filling), one of my crispy rice dishes is such a good add-on and pairs perfectly with all the savory, saucy flavors in this bowl.

How to Make
Cook udon until loosened. Reserve a splash of water, drain, and set aside. Sear steak in an even layer until just browned. Remove and set aside.

In the same skillet, add mushrooms, onion, and bell pepper and cook until softened.

Toss in cabbage and scallion whites. Add garlic + ginger and sauté.

Add soy sauce, oyster, hoisin, rice vinegar, brown sugar, and chili crisp. Stir until glossy and bubbling.

Add udon + steak back in. Toss until coated and saucy, adding noodle water to loosen as needed.

Top with scallion greens, sesame seeds, and more chili crisp.

Thank you! I don’t know too many recipes for udon that aren’t soup so this was great!!
Tips and Tricks
- Slice the beef super thin. If you’re cutting it yourself, pop it in the freezer for 10–15 minutes first. It makes slicing easier and helps the steak cook quickly and evenly.
- Don’t overcook the beef in the first step. You’re only giving it a quick sear. It finishes cooking once it goes back into the pan with the sauce so it stays tender.
- Save a splash of noodle water. The starchy water helps loosen the sauce and gives the noodles that glossy, restaurant-style finish.
- Prep everything before you start cooking. This recipe moves fast, so having the sauce mixed and veggies sliced ahead of time keeps it truly a 15-minute dinner.
How to Save and Store
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or in the microwave with a small splash of water or broth to loosen the sauce and bring the noodles back to life. This recipe is best enjoyed fresh, but it does reheat well for an easy next-day lunch or dinner.

Saucy 15 Minute Beef Udon Noodles with Veggies
Ingredients
Noodles
- 2 packets udon (frozen or fresh cooked (you can get them on amazon))
- 10-12 oz thinly sliced steak (ribeye, sirloin, flank, shaved beef)
- 1 tbsp avocado oil or ghee
- ½ small yellow onion (thinly sliced)
- 2 cloves garlic (minced)
- 1 tsp grated ginger (can use jar ginger)
- 1 cup shredded green cabbage
- 1 cup sliced mushrooms (shiitake or cremini)
- ½ red bell pepper (thinly sliced)
- 2-3 scallions (sliced (whites for cooking, greens for topping))
Sauce
- 3 tbsp coconut aminos (or soy sauce)
- 2 tbsp hoisin
- 1 tbsp rice vinegar
- 1 tbsp coconut sugar (can sub brown sugar or honey)
- 1-2 tsp chili crisp or sriracha (to taste)
- ¼ cup noodle water or broth (to loosen if needed)
To garnish
- Sesame seeds
- Extra chili crisp
- Lime wedge
Instructions
- Bring a small pot of water to a boil. Cook udon 1–2 min until loosened. Reserve a splash of water, drain, and set aside.
- Heat oil in a large skillet over medium-high. Add steak in an even layer and sear 1–2 min per side until just browned. Remove and set aside (it finishes in the sauce).
- In the same skillet, add mushrooms, onion, and bell pepper. Cook 2–3 min until softened. Add cabbage and scallion whites and cook 1–2 min more. Add garlic + ginger and sauté 30 seconds.
- Lower heat to medium. In a small bowl mix together coconut aminos, hoisin, rice vinegar, coconut sugar, and chili crisp. Then add into the skillet and stir until glossy and bubbling.
- Add udon + steak back in. Toss until coated and saucy, adding noodle water to loosen as needed.
- Top with scallion greens, sesame seeds, and more chili crisp.
Notes
- Any thin, quick-cooking steak works well here (shaved beef, sirloin, flank, or ribeye). Just be sure it’s sliced very thin so it stays tender.
- Frozen udon gives the best chewy texture, but fresh udon noodles can be used if that’s what you have.
- Taste the sauce before adding the noodles and adjust if needed. Add a splash more soy for salt, brown sugar or honey for sweetness, or chili crisp for heat.
- You can easily add more vegetables (like broccoli, snap peas, or spinach) without changing the sauce amounts.
