S’mores Fudge

ingredients and Substitutions
The base of these fudge bites are made with a piece of graham cracker. You can use regular, cinnamon, or honey. To make this recipe gluten free, use gluten free graham crackers.
Layered on top of that is a mini marshmallow. I used vegan marshmallows from Dandies, but you can use any type that you’d like. Make sure you are using mini though, the larger ones will be hard to work with.
This recipe is dairy free with the use of dairy free dark chocolate chips. I love using the ones from Trader Joe’s, however you can use non dairy or dairy dark chocolate. Not a fan of dark? Use milk instead!
Combining all natural runny peanut butter with the melted dark chocolate is what’s going to give this recipe that fudgey texture. You can use any type of nut or seed butter such as cashew, almond, sunflower seed, pumpkin seed or even oat butter.

how to make
ONE: Add a small piece of graham cracker to the bottom of a silicon ice cube tray. Then, add on the vegan marshmallows. Set aside.


TWO: Next, melt the dark chocolate with a teaspoon of coconut oil in the microwave in 30 second increments, stirring well each time until creamy and smooth. Then, add in the peanut butter and mix until well incorporated.



THREE: Pour the chocolate into each cavity of the ice cube tray and smooth out the tops. Place in the freezer for a minimum of 4 hours or until firm to the touch. Remove from the liners and enjoy!



Tips and tricks
Use a silicon ice cube tray for best results. These make it really easy to pop out the fudge once they are firm. If you don’t have these ice cube trays, use silicon cupcake liners instead.
Add in more graham crackers and mini marshmallows to your liking!
If you don’t have peanut butter, use a different type of nut or seed butter.
Try toasting the marshmallows before adding on the chocolate!
How to serve and store
Enjoy these s’mores fudge bites on their own or with a cup of coffee or hot chocolate! Each them as an afternoon snack, after dinner dessert, or bring them to a BBQ or potluck this summer (just made sure they are stored properly to avoid melting).
Store these bites in an airtight container in the fridge or the freezer and enjoy within 7 or 30 days!

If you want to achieve that fudgey texture, then yes. The fat content is what gives this recipe that fudge texture. Otherwise, you can skip it and just use chocolate but it will be more firm like a chocolate bar.
