Homemade Pistachio Milk (with dates)

Homemade Pistachio Milk with Dates is a creamy, naturally sweet dairy-free milk alternative made with soaked pistachios, Medjool dates, and vanilla. Easy to blend in minutes, this rich and nutty pistachio milk is perfect for lattes, smoothies, baking, or enjoying on its own.

There’s something special about making your own nut milk at home—it feels a little extra, but once you try it, you’ll see just how simple (and delicious) it really is. I’ve shared versions like my Almond Milk, Hemp Milk, and even Oat Milk before, but lately I’ve been hooked on this Pistachio Milk with Dates. It’s naturally sweet, beautifully creamy, and has that subtle nutty flavor that feels just a little more unique and elevated than the usual go-to.

One of my favorite parts is how versatile it is. You can pour it into your morning coffee or latte, blend it into smoothies, or use it as the base for my Pistachio Overnight Oats. It even works beautifully in baking recipes when you want a hint of richness without dairy.

How to Make Pistachio Milk with Dates

Soak the pistachios: Place raw, shelled pistachios in a bowl and cover with water. Soak until soft and tender.

pistachios in a bowl of boiling water to soak.

Peel (optional): For the smoothest, lightest-colored milk, rub the soaked pistachios in a clean towel to remove the skins. This step takes a few extra minutes but makes a big difference in flavor and color.

Blend it up: Add the soaked pistachios, fresh water, pitted Medjool dates, vanilla, and a pinch of sea salt to a high-speed blender. Blend on high for 1–2 minutes until completely smooth and creamy.

Strain: For extra-smooth milk, pour through a nut milk bag, cheesecloth, or fine mesh sieve into a clean jar.

Store and enjoy: Transfer to an airtight jar and refrigerate for 4–5 days. Shake before each use, as natural separation will occur.

Tips and Tricks for the creamiest homemade milk

  • Soak for creaminess: The longer the pistachios soak, the creamier your milk will be. Overnight soaking gives the smoothest result.
  • Peeling makes a difference: Removing the skins creates a lighter color and cleaner flavor. It’s optional, but worth it if you have a few extra minutes.
  • Strain or not: If you prefer a thicker, more rustic milk, you can skip straining. For a silky, barista-style texture, always strain through a nut milk bag or fine mesh sieve.
  • Sweetness to taste: Adjust the number of dates depending on how sweet you like your milk. Start with two and add more as needed.
  • Flavor add-ins: Try a pinch of cinnamon, cardamom, or even cocoa powder for a fun twist.

How to Use Pistachio Milk

Homemade pistachio milk is so versatile and can be swapped anywhere you’d normally use dairy or plant-based milk. Here are a few of my favorite ways to enjoy it:

  • In your morning coffee or lattes– it adds a nutty, creamy twist that feels café-worthy.
  • In overnight oats– especially my Pistachio Overnight Oats, but it works beautifully in Matcha Overnight Oats or Strawberry Overnight Oats too.
  • In baking recipes– use it in place of almond milk in muffins, pancakes, or quick breads for a subtle pistachio flavor.
  • Blended into smoothies– adds creaminess and natural sweetness, especially with dates or bananas.
  • Simply chilled in a glass– it’s so good on its own, almost like a lightly sweet pistachio milkshake.

How to store Pistachio Milk

Refrigerator: Store in a sealed glass jar or airtight container in the fridge for up to 4–5 days.

Shake before using: Natural separation is normal—just give it a good shake before pouring.

Freezer: You can freeze pistachio milk in ice cube trays for up to 1 month. Use the cubes in smoothies or thaw small portions as needed.

Creamy homemade Pistachio Milk with Dates is a dairy-free nut milk that’s naturally sweet, smooth, and easy to make in just minutes. Perfect for lattes, smoothies, or baking.
Prep Time 1 hour
Cook Time 5 minutes
Servings 1 liter

Ingredients

  • 1 cup raw (unshelled pistachios (unsalted))
  • 3-4 cups filtered water (start with 3 for creamier milk, add more for thinner)
  • 4 Medjool dates (pitted) (sub maple syrup, honey or agave)
  • 1 tsp vanilla bean paste or extract (optional, for extra flavor)
  • 1 Pinch of sea salt

Instructions

  • Place pistachios in a bowl and cover with water. Soak for at least 6 hours or overnight. (For a faster option, soak in hot water for 1 hour.) Drain and rinse. Add pistachios to a towel and rub to remove and skins.
  • Add soaked and peeled pistachios, fresh water, dates, vanilla, and sea salt to a high-speed blender. Blend on high for 1–2 minutes until completely smooth and creamy.
  • For extra-smooth milk, strain through a nut milk bag, cheesecloth, or fine mesh sieve into a clean jar.
  • Transfer to an airtight jar and refrigerate for up to 4–5 days. Shake before each use, as natural separation will occur.

Notes

  • For the creamiest milk, stick to 3 cups of water — if you like it lighter, add up to 4 cups.
  • Don’t skip straining if you prefer ultra-smooth milk; a nut milk bag or cheesecloth will give you the silkiest texture.
  • The dates add natural sweetness, but you can adjust the amount (or even skip them) depending on how you plan to use the milk.
